With the development of economy and pace of life,The Eating habits of consumers have also changed gradually.More and more consumers choose to eat in the canteens and restaurants.Food material of canteens and restaurants were invited for bids from suppliers.It's essential to reduce the risk of food safety because more people in the cafeteria and restaurant,the higher potential of food safety risks.In recent years,the food distribution industry development more quickly.In recent years,the food distribution industry has developed rapidly,but different food distribution enterprises' conditions are different.Generally speaking,Food distribution industry is still in its infancy.It is important to evaluate the food safety risk control ability of food distribution enterprises objectively and scientifically.Therefore,this article puts forward the Study on the Evaluation Index of Food Safety Risk Control Capability of Food Distribution Enterprises.The evaluation index is serving for customers,this article hold the view of social professional third organization,consecrating the opinions of the consumers and ensuring evaluation index model scientific and professional.This article use the method of literature study,inductive deductive method,comparative study,quantitative and qualitative analysis,field investigation and expert consultation method and so on methods to determine the evaluation index system of indicators,using analytic hierarchy process(AHP)to determine weights,Food safety risk control capability evaluation index system of food distribution enterprises Including 5factors in first grade index,19 factors in second grade index and 30 factors in third grade index.The first grade index include five factors,historic performance,certification,food processing,storage and transportation conditions,management measures and the testing results.The second grade index Includes testing record,regulatory,positive evaluation,certified quantity,certified quality,product pretreatment conditions,storage conditions,product transport conditions,test conditions,food security agencies and personnel management,procurement,inspection measures,food processing,storage and transportation process management,traceability system,unqualified food and emergencyevent handling,implement supervision and management system and reward measures,This evaluation index system is validated in the enterprise.Enterprise management,expert representatives and consumer representatives agree with the index system.This index system model is scientific and reasonable,meet to the enterprise need,it is easy to operate.This index model can calculate the index of the food distribution enterprise food safety risk control ability,guiding the consumer to choose and buy the ingredients.It also can be used as a enterprise inspection standards,help them to find out problems and sum up experience.At the same time,it also can be used as the reference of risk classification management for the food safety regulators.,is a set of evaluation index system of worthy of popularizing.To sum up,this evaluation index system is worthy of popularization and promotion.
