In recent years, the amount of food for import and export had increased year by year in China. More items were forced to detect abroad, which greatly increased the workload of inspection and quarantine workers. Traditional regulatory model had been unable to meet the development needs of the current. First, Food safety regulatory model was not based on the food risk model.Secondly, the traditional regulatory model had long testing time and low efficiency, which can not meet the requirements of the "fast clearance" demand by the National Inspection Bureau. Thirdly, because of the lack of relevant decision support in the process of food safety inspection, the detection result is subjective. Based on this, the paper studied the risk model and decision support in food safety supervision. The research content included the following three aspects:(1)Research on the risk model of food safety in import and export. First, the feature parameters of the model is selected, and the characteristics of classical domain and whole real filed are established, then apply the AHP to determine the weight of each feature. Finally, the food risk level can be getted by determining the correlation functions of the model.(2)The research of food safety supervision in the decision support. It is to determine the risk factors and sampling rate of food by using expert system. Its introducts the process of building the knowledge base and the way of knowledge ways.Then research the collaborative filtering algorithm to recommend the rule. Finally,Reasonable inference engine is designed and the elimination strategy of rule conflict is designed.(3) Design and development the food safety supervision system based on the javaEE technology,it can be used to the Inspection and Quarantine Department. It involvs the system development freamwork technology and MVC development fream.Finally, the functions of food risk model and decision support are achieved by using the javaEE technology.
