Soybeans are rich in nutritional ingredients,but are prone to quality deterioration,oil immersion,and reduced germination during storage,and because of their structural characteristics,they have high water activity,poor storage resistance,poor temperature resistance,and easy deterioration.Storage characteristics.Therefore,how to ensure the safe storage of soybeans and reduce the loss of edible and processing quality during storage is of great significance for enriching the grain and oil market and ensuring the safety of China's grain and oil storage.This article uses three storage methods to explore the conditions and feasibility of soybean water retention and ventilation.The effects of internal circulation temperature-controlled storage technology on the physical and chemical properties and processing properties of soybean during storage are compared.The nitrogen-filled storage and conventional internal circulation are compared.The main research results of stored soybean quality are as follows:?1?The effects of three different storage methods on the storage quality of soybeans in Northeast China were compared.The internal circulation storage method could significantly reduce grain temperature in August,with an average temperature reduction of 4.5?and a contrast reduction of 15.12%.With the increase of storage time,the internal circulation storage method can delay the water loss of soybeans,and the water content decreases by 2%after 150 days of storage.During storage,the germination rate of soybeans gradually decreased.After 150 days of storage,the germination rate of internal circulation storage soybeans was 93%,which was 5%higher than mechanical ventilation and 7%higher than ordinary warehouses.Internal circulation storage can reduce the decline rate of soybean nitrogen solubility index,delay the increase of total acidity and protein denaturation of soybean,improve the gelatinization characteristics of soybean,delay the increase of soybean fatty acid value,reduce the degree of soybean mildew during storage,and improve the soybean Storage quality.?2?In the experiment of the effect of nitrogen-filled nitrogen regulation combined with internal circulation storage on soybean storage quality,the soybean germination rate,catalase activity,and nitrogen solubility index of the nitrogen-filled nitrogen regulation group and the control group gradually increased with the storage time extension.reduce.In the modified atmosphere group,the germination rate remained above 95%after 120 days of storage.The decline in the control group was more obvious than in the modified atmosphere group.After 120 days,the germination rate was 87%.The germination rate in the control group decreased to 80%after 180days.The nitrogen solubility index of the control group decreased from 82.86%to62.79%,a decrease of 20.07%,while the nitrogen solubility index of soybean stored in nitrogen-filled and internal circulation decreased from 82.86%to 77.14%,a decrease of 5.72%.Nitrogen-filled soybeans adjusted the original value to19.0mg H2O2/g,which decreased by 1.6mg H2O2/g after 180 days of storage,and the catalase activity of the control group was significantly reduced,and decreased to16.8mg H202/g after 180d of storage.Lipase activity first increased and then decreased.The fatty acid value of the nitrogen-filled group did not change much in the first 60 days,and increased significantly with temperature after 90 days.After 180days of storage,the nitrogen-filled control group increased from the initial 2.5mg/100g dry matter to 7.8mg/100g,and the control group increased to 9.7mg/100g.With the increase of storage time,the growth rate of acid value increases.After 180 days,the acid value of soybean oil in the control group increased from 0.17 mg/g to 2.19mg/g,an increase of 92%,and the nitrogen storage increased to 0.96 mg/g,which was40.10%lower than that in the control group.The circulation storage method can further delay the deterioration of soybean storage quality.
