For the purpose to develop and utilize the resource of saw palmetto,the research were carried out by using saw palmetto fruit as materials,the oil were extracted from fruit of saw palmetto by supercritical CO2 extraction method,the process conditions were optimized depending on single factor investigations and response surface method,and the fatty acid compositions were analyzed by Gas Chromatography combining Mass Spectrometry technology.The antioxidant activity of saw palmetto fruit oil were preliminary evaluated with external antioxidant evaluation method,too.The main study results were shown as follow:1.This research was designed to study and optimize the supercritical extracting technology for fruit oil from saw palmetto.The results showed that: some factors affecting extraction rate of oil from saw palmetto fruit were ranked,as follows:extraction temperature >time>pressure.Furthermore,the extraction temperature had extremely significant effects on extraction rate of oil?P<0.01?,and the interaction between time and temperature as well as pressure had significant effects on extraction rate of oil?P<0.05?,so did the extraction time.In addition,the optimum process conditions were as follows:the extracting time was 1.6 h,the pressure was 24 Mpa and temperature was 41 ?.Under the above optimum conditions,the extraction rate of oil was 12.26%,and the model predicted value was 12.22%,thus the error was 0.04%.By using the method of GC-MS,the analysis results of fruit oil extracted by supercritical CO2 revealed that 24 kinds of fatty acid compositions were identified,of which 9 were unsaturated fatty acids,and 15 kinds of fatty acid were saturated fatty acids.2.The antioxidant activity of saw palmetto fruit oil by Supercritical extraction were studied.The results revealed that saw palmetto fruit oil by Supercritical extraction have some antioxidant activity.DPPH radical scavenging ability of oil from saw palmetto fruit and antioxidant group were ranked as follow:VC> rutin >BHT>fruit oil.ABTS +radical scavenging ability of oil from saw palmetto fruit and antioxidant group were ranked as follow:VC>BHT> rutin >fruit oil.The total reductive power of oil from saw palmetto fruit and antioxidant group were ranked as follow:VC>rutin >BHT>fruit oil.Ferric reducing ability of plasma?FRAP?of oil from saw palmetto fruit and antioxidant group were ranked as follow: rutin >VC>BHT>fruit oil.The anti-lipid peroxidation ability of oil from saw palmetto fruit and antioxidant group were ranked as follow:BHT>rutin>VC>fruit oil.Base on the different antioxidant indexes,The effect of antioxidant activity of oil from saw palmetto fruit by Supercritical extraction were ranked as follow:anti-lipid peroxidation ability> DPPH radical scavenging ability >total reductive power>total antioxidant capacity>ABTS +radical scavenging ability.On the whole,the concentration value of supercritical extraction fruit oil with good antioxidant activity is about 6.70mg/m L...
