In this experiment,LED light sources were used as light conditions to study the growth of mycelia and fruiting bodies of Shiitake mushroom under different light quality conditions,and the changes of antioxidant enzymes and active ingredients were studied to find out the best light quality for mushroom growth.The selection of light quality provides a theoretical basis,and at the same time,it improves the beneficial active ingredients of shiitake mushrooms through regulating light quality,and provides a theoretical basis for the development and utilization of shiitake mushrooms.1.In this experiment,it was found that blue light promoted the growth of mycelium of Shiitake mushroom and the accumulation of mycelium biomass was the highest,On the twelfth day,the accumulated amount reached 0.598 g.2.Yellow light treatment can increase SOD activity of mycelium of Shiitake mushroom,On the 10th day reached a maximum of 102.54 U·g-1.The activity of POD enzyme in the red light treatment was highest in the early growth stage,and the POD activity in the yellow light treatment was the highest in the late growth stage;The blue-treated CAT enzyme has the highest activity.The polysaccharide content was highest under blue light treatment,On the 10th day reached a maximum of 46.35 mg·g-1.3.In the early stage of Shiitake mushroom mycelium growth,The activity of PALenzyme under blue light treatment was the highest,and the darkness at the late growth stage was the highest.The activity of PPO enzyme under white light treatment and yellow light treatment was at a high level,and the blue light treatment increased significantly at the later stage.The total phenolic content was highest under the blue light treatment in the early stage,and was the highest under dark treatment in the late.The yellow light treatment had the highest accumulation of chlorogenic acid,which was 0.32 mg·g-1.4.This experiment found that red light promotes the length of the stipe and acceleratesthe growth of the thickness of the cap.The blue light promoted the growth of the diameter of the cap,and the biological efficiency under the red light treatment was the highest.5.The activity of SOD enzyme in the fruiting bodies of Shiitake mushroom was thehighest in the early and late stages under blue light treatment.The activity of PAL enzyme was the highest in the blue light treatment;the activity of the PPO enzyme in the yellow light was the highest;the content of the polysaccharides in the red light treatment was the highest;soluble protein,polyphenols and chlorogenic acid is always maintained at a high level under blue light treatment.
