Palatability enhancer is non-nutritional additives added in animal food in orderto increase palatability and play an increasingly prominent role in feed industry.With the improvement of people's living standards,the market of pet dogs continues to develop,the feeding is transferring from the traditional family leftovers into professional dog food,while the nutrition of dog food develops,researchers pay more attention to the palatability,as palatability is a prerequisite for the nutrient absorption,dog food attractant emerges.Currently on the market,the production process of dog food attractant is mainly from the Maillard reaction.Spices are abundant as natural flavor resources in china and a large number of studies have shown that natural spices can significantly improve the feed palatability.This assay chooses protein-rich Chicken liver as the main raw material of Maillard reaction and studies the production process of dog food attractant by adding natural spices into Enzymatic hydrolysis liquid of Chicken liver on the base of Maillard reaction formula.In preliminary experiments,the impact of substrate concentration,enzyme dosage,reaction temperature,reaction time and pH of liquid on enzymatic hydrolysis of chicken liver is studied through single factor test and optimal hydrolysis conditions are determined with degree of hydrolysis as an indicator by orthogonal test.Formal experiments first study the factors which affect Maillard reaction effect through single factor test,and the best Maillard reaction formula is determined with sensory evaluation scores as an indicator by orthogonal test.On this basis,the best excellent combination of the amount of spices added into the basic Maillard reaction formula is obtained through BBD experiment design and response surface methodology.The researchers add dog food attractant to the base dog feed with a certain percentage to evaluate the effect of its palatability by pet feeding study,in order to obtain green and healthy dog food attractant and to further develop the dog food attractant market and drive the development of China's traditional spices market.By measuring ingredients of chicken livers,researchers find it contains 17.6%protein and 3.8%fat which can be used as a raw material of Maillard reaction.With gaschromatography-mass spectrometry analysis,the main flavor of dog food attractant comes from sulfur-containing compounds and heterocyclic ring compounds and the flavor of meat is produced by sulfur-containing compound 3-mercapto-2-pentanone and 2-furfuryl mercaptan while the flavor of baked fragrance comes from heterocyclic compounds such as 3-methyl pyrazine.Factors affecting the Maillard reaction product are the addiction of xylose,L-cysteine and alanine,as well as reaction Ph,reaction temperature and reaction time.The optimal formula of Maillard reaction is determined as chicken liver hydrolyzate 500g,10g of xylose,2gL-cysteine,2g alanine mixing with adjusting the reaction Ph to 6.5,the reaction temperature to 100 ? and reaction time to40min through orthogonal experiment based on single factor test with sensory evaluation scores as an indicator.On the basis of the Maillard reaction formula the study shows that clove powder,cinnamon powder and garlic powder can all enhance meaty and fragrant aroma of baking effect through a single factor test.With sensory evaluation score as the index,arrange the addiction of cloves powder,cinnamon powder into BBD design test to study the effect of spices on enhance fragrance though the response surface methodology.The optimal combination of the amount of spices is obtained through the prediction of regression model with clove powder 0.72g,1.02g cinnamon powder and garlic powder 1.05g.Palatability test is carried out by internationally accepted method of dual-cone test and results show that 18 dogs choose A grain and A grain consumption volume is 92.1%during the first meal on the first day while 2 dogs prefer B grain and B grain consumption is 16.3%,that 16 dogs choose A grain and A grain consumption volume is 80.4%during the second meal on the first day while 4 dogs prefer B grain and B grain consumption is 32.3%,that 15 dogs choose A grain and A grain consumption volume is 75%during the first meal on the second day while 5 dogs prefer B grain and B grain consumption is 53.9%,that 16 dogs choose A grain and A grain consumption volume is 67.6%during the second meal on the second day while 4 dogs prefer B grain and B grain consumption is 32.2%.In terms of thepreference and consumption rate,the attractant effect of homemade dog food attractant with natural spices is much better than commercial dog food attractant.
