The country puts the people first,people put food first,and food puts safety first.Food safety has an important responsibility related to the national economy and people's livelihood.China,as a populous country,should pay more attention to the management of food safety.The translator decides to translate and analyze chapters 1,2,3,and 5 of Food Safety Management: Implementing a Food Safety Program in a Food Retail Business.This excerpts mainly introduced the principles and methods of implementing a food safety program in the American food retail business,as well as the problems and specific solutions encountered during the implementation of the program.The theoretical guidance of this translation practice is Relevance Translation Theory,which was proposed by Gutt based on inheriting and developing the Relevance Theory.Gutt believes that translators should take the initiative to achieve the optimal relevance between the original text and the target text.Combined with the content and language characteristics of the original text,the translator classifies it into the information guidance text and gives full play to the initiative in the translation process to achieve the best information relevance.Under the guidance of this goal,the translator analyzes the excerpted text from three levels: quote symbols,lexical and long sentences.For the quote symbols,the translation methods of transplanting and converting are adopted in punctuation symbols and the classification method is used for graph symbols.The translation of the multi-types terms is one of the difficult points in the lexical part,based on the principle of optimal relevance to specify organization terms,determine biological and bacterial terms,and adjust commercial terms.The sentences are focused on the logical analysis and judgment of long sentences,as well as a direct translation of juxtaposed elements,divide translation of the main and subordinate parts,and recombine the multiple modifiers.The purpose of this practice is to summarize the E-C translation strategies of symbols,terms,and modification parts of informative instructional text,which can provide some references for the translation research of such text.At the same time,it provides food safety management experience for China's professionals,which has a certain reference significance to improve the food safety management of Chinese retail businesses.Besides,combining the principles of relevance translation theory and the role of the translator,which can help the translator to convey the intention of the author accurately and help the target reader to obtain the optimal information.
