Nowadays, with the rapid development of genetic engineering technology, its application in the field of food has also attracted widespread attention.People have been discussing and questioning whether it is safe or not,and their attitudes are different. The text for this translation project is from the ninth chapter of Future Foods: How Modern Science is Transforming the Way We Eat,which is written by Professor David Julian McClements. In the book,Professor McClements shares something about genetic engineering with readers, and shows the achievements in food biotechnology through the cases. This book has an instructive meaning to the development of genetically modified food in China and the change of people's attitude towards genetically modified food. This translation project report details the whole process of the author's translation practice, including preparation before translation, exploration during translation and summary after translation.Under the guidance of Skopos theory, this paper analyzes the key and difficult problems in the translation of scientific and technological texts at the lexical, syntactic and textual levels. At the lexical level, the difficulty is particularly reflected in the translation of some proper nouns and common nouns. At the syntactic level, difficult sentences include long and complex sentences as well as passive sentences. At the textual level, the difficulty is particularly caused by the syntactic features and logical cohesion differences between Chinese and English. In order to settle these difficulties at the lexical, syntactic and textual levels, the author adopts some translation skills—including addition, depletion, translating in sequence, disassembling translation and translating in reverse—in accordance with the requirement of Vermeer's Skopos Theory. The author has benefited a lot from the translation practice and the writing of the report. On the one hand,in the process of translation, the translator should not only accurately convey the original information, but also fully consider the expression habits of the target language,so that the readers can fully understand the intention of the original author. On the other hand, the author has a deeper understanding of the three principles of Skopos Theory: skopos rule, coherence rule and fidelity rule. The author hopes to be more proficient in choosing appropriate translation methods for translation practice under the guidance of translation theory in the future.
