In recent years,the mutton market has developed rapidly.China's mutton production and per capita possession have increased rapidly.The proportion of mutton production in the total meat production has gradually increased.Since 2000,it has increased by more than 30 percent to more than 50 percent.It can be seen that the proportion of lamb meat in the animal husbandry structure in China has gradually increased,and the development potential of China's lamb meat market is relatively large.With the increase of mutton production and the increase in demand for mutton,the price of mutton has been unstable.Before 2014,the price of mutton has been on a rising trend.Since 2014,the price of mutton has been gradually lower,as herdsmen are at the low end of the value chain.The interests are relatively easy to be damaged,making the production and living conditions of herdsmen directly affected,and the unequal distribution of benefits in various aspects of the value chain has also increased.Therefore,the study of a series of mutton production,acquisition,slaughtering,processing and retailing,namely the study of mutton value chain,has an important impact on the development of the mutton market in China and the improvement of herdsmen's living standards,and at the same time it is important for the development of the mutton consumption market in China.In this regard,based on Michael Porter's value chain theory,cost-benefit theory,and transaction cost theory,this article selects one of the entire value chains that may be involved in the lamb's value chain: herdsmen,purchasers,slaughter and processing companies,Taking the typical lamb-based value chain of franchised stores and consumers as an example,by referring to a large amount of literature and field research to obtain data,combining the statistical compilation of Inner Mongolia Statistical Yearbook and cost-benefit data,using statistical analysis,and summarizing research methods,the mutton price is formed.The process and the cost,value-added value,and income distribution of each link between the participating entities are analyzed;based on the principle of income distribution,a profit distribution model is established to compare the theoretical and actual value of benefits in each link of the value chain.The income of each link was re-distributively valued,and the analysis of the formation of market price of lamb meat and the reasons for the difference in price with the lamb meat of herdsmen were analyzed.It was concluded that the biggest beneficiaries in the lamb meat value chain were slaughter and processing companies,followed by lamb meat franchise shops and finally the purchasers.Second,the development of lamb meat prices from pastoral households to the market was priced by the price formation mechanism,the level of interest of participating parties,and price transfer.The impact of the mechanism and the degree of consumer demand in the market,and finally put forward optimization proposals for the lamb meat value chain.
