In our country,the water resources are abundant and there are a lot of aquatic products.Aquatic products are usually used as cooking ingredients for human consumption and provide humans with abundant nutrients such as proteins,vitamins and minerals.However,with the continuous increase in the demand for aquatic products,safety issues of various aquatic product have occurred frequently.The incidents of "Treasure Fish" and "rhabdomyolysis caused by crayfish " have taught us a lot and also caused people pay more attention to the quality and safety of aquatic products.In order to monitor the quality and safety of the aquatic products,a sampling inspection was conducted on the aquatic products at the sales outlets in Yangzhou in 2017.with the sample size was 567 batches.The results of sampling inspections were analyzed to find out the reasons for the quality and safety of aquatic products,form the survey reports,and provide the suggestions for improving the supervision work.It provides a reliable basis for improving the regulatory measures for aquatic products and helping the government and relevant departments to make decisions and take implementing control measures.1 Investigation on Consumers' Cognition of Aquatic Products in Yangzhou CityIn order to improve the quality and safety supervision measures of aquatic products,the residents in 3 districts,2 county-level cities and 1 county in Yangzhou were investigated using a random questionnaire.The content of the survey was mainly about consumers' awareness of aquatic product quality,cognitive approaches,and ways of purchasing aquatic products.The survey results showed that consumers had low awareness of the quality and safety of aquatic products in Yangzhou City,and they were still less satisfied with the quality and safety of aquatic product sales in this Yangzhou region.The government and the media should increase the food safety risk awareness and guide the consumers to correctly and objectively understand the quality and safety of aquatic products.2 Analysis of sampling results of aquatic products During the sales process in Yangzhou CityThe detection of residues of veterinary drugs,chemical contaminants,microorganisms and parasites,and heavy metal residues in seven types of aquatic products in Yangzhou City was carried out following the relevant national standards.It provided the reference for future food safety supervision and decision-making.Through data analysis,it has been found that enrofloxacin can be detected in most aquatic products,the highest content of enrofloxacin is freshwater fish,and there was a difference in the content of enrofloxacin in different aquatic products(P<0.01).The content of heavy metals found in freshwater prawn was generally higher than other aquatic products,suggesting that freshwater prawn may have potential risks.Total of 17 samples were failed among the 567 samples,and the overall qualification rate was 97.0%.The reason for the disqualification was that the residue of veterinary drugs exceeded the standard,and the excess veterinary drug residues were metabolites of enrofloxacin,malachite green,and nitrofurazone.However he remaining testing indicators did not exceed the standard.Excessive aquatic products were mainly salmon,mackerel,mackerel,blackfish and small yellow croaker.Based on the results of this sampling,he causes for the excess of metabolites of enrofloxacin(enrofloxacin + ciprofloxacin),malachite green,and furacilin in aquatic products were analyzed.3 The safety assessment of heavy metal in Procambarus clarkii samplesIn order to understand the pollution of heavy metals such as lead,mercury.arsenic,cadmium,and chromium in Procambarus clarkia.A total of 60 samples of Procambarus clarkii were sampled in Yangzhou.The samples were mainly obtained from Jixian County,Huaian City,Jiangsu Province and Hanjiang District,Yangzhou City,Jiangsu Province.The microwave digester was used to pretreat the crayfish,and the contents of lead,mercury,arsenic,cadmium,and chromium in the heavy metals were detected by ICP-MS.The test results showed that:the average values of lead,mercury,arsenic,cadmium,and chromium were 0.093±0.130 mg/kg,0.039±0.059 mg/kg,0.137±0.060 mg/kg,0.006±0.008 mg/kg,and 0.490±0.573 mg/kg,respectively.Among them,there were 2 samples which exceeding lead and 1 sample exceeding chromium.The results of the lead-risk assessment of Procambarus clarkii obtained by @risk software showed that lead exposure of PTMI was 29.20%,and chromium exposure was 63.34%of the weekly tolerance.The amount of lead and chromium in the diet from Procambarus clarkii will not harm the human health.
