Food safety is now a global concern.and it is also a problem that has been frequently exposed in recent years.As the saying goes,"people take food for the sky",so food safety is the basis of people's livelihood.This study started with the food safety questionnaire survey of the employees,and conducted a survey and spot check on the food safety and hygiene of the food supply enterprises in Jianghai canteen,investigated the procurement methods of the canteens.and studied the hidden dangers of food safety in the canteens of colleges and universities.The research results are as follows:1 Investigation of employees in the canteen of Jianghai Vocational and Technical College:A total of 111 employees were selected for food safety KAP questionnaire survey,and SPSS software was used for statistical analysis.The results showed that there was no significant difference in food safety knowledge scores among employees of different genders in the canteen(P>0.05).The differences in food safety knowledge scores of employees of different ages.working ages,education levels and positions were significant(P<0.05).and food safety knowledge.There was no significant difference in food safety attitude and score between the scores,middle and poor scores(P>0.05).Therefore,processing personnel with long age,low academic qualifications and short working years should be the focus of food safety training,and guidance training combining theory and practice should be strengthened.2 Jianghai Vocational and Technical College canteen site survey.The survey results are:hardware environment:85.1%of the canteen hardware can basically meet the requirements of production hygiene,14.9%of the canteen,its production equipment and conditions are poor,pending rectification.Hygiene situation of the canteen:About 80%of the enterprise equipment,production workshops and warehouses are in good sanitary condition.The hygienic standard management of these canteens basically meets the hygiene requirements.About 20%of the canteen equipment,production workshops and warehouses are relatively poor.The system and implementation of the health management of these canteens is also poor.About 88%of the canteens have poor quality awareness and canteens have poor inspection capabilities.Only about 4%of companies pay more attention to the quality of food and have better inspection facilities and personnel.3 Jianghai Vocational and Technical College canteen product sampling inspection:the test results are in all samples taken,17 batches of food individual indicators exceeded the standard.Among the projects exceeding the standard.6%of the physical and chemical indicators exceeded the standard,and the remaining 94%exceeded the microbiological indicators.The pass rate of physical and chemical indicators was 98%,and the pass rate of microbial indicators was 83%.The results of this study show that microbial contamination is the biggest safety hazard.It is suggested that relevant departments should start from controlling microbial pollution,increase supervision,and strive to reduce the risk of food contamination and ensure the health of consumers.4 Sample survey of food procurement methods in Jianghai Vocational and Technical College.The results of the survey are as follows:A sample survey of foods purchased daily in the cafeteria,including rice,flour,oil,eggs,fresh meat,vegetables,frozen foods and soy products.The quality of foods collected centrally is generally better than that of non-centralized procurement.There was a significant difference in the quality of fresh meat between the procurement methods(P<0.05).There was a significant difference in the quality of fresh meat between the procurement method and the season(0.05<P<0.1).There were significant differences in the quality of vegetables between the procurement method and the season(P<0.05).There was a significant difference in the quality of vegetables between the procurement time(0.05<P<0.1).The interaction between the procurement method and the season had a better quality for the vegetables.Significant difference(0.05<P<0.1).There were significant differences in the quality of frozen products between the procurement method and the season(P<0.05).There was a significant difference in the quality of frozen products between purchase time(0.05<P<0.1).The interaction between the procurement method and the season had a frozen product.Significant difference(P<0.05).There was a significant difference in the quality of the soy products between the procurement methods(P<0.05).5 Countermeasures and suggestions for quality and safety control of canteens in Jianghai Vocational and Technical College:The countermeasures and suggestions for strengthening food quality and safety control are proposed from two aspects of school and government supervision departments.Suggestions for the school:It is necessary to strengthen the training of employees in the canteen,improve the production level of the canteen,improve the management system of the canteen,strengthen the standardized management of the canteen,and improve the inspection and testing system.Suggestions for the regulatory authorities:enrich the grassroots supervision power,improve the level of grassroots supervision,strengthen supervision and management,and establish a risk early warning mechanism.
