University canteens that provide catering service for teachers and students are the important objects of the supervision in food safety supervision.The previous supervision approaches based on manual work are unable to meet the needs of safety supervision in university canteens.It is very urgent to improve the level of food safety supervision by modern technological methods.To solve the problems,a catering information system was developed for our university to give a higher-level information management on all aspects of food production.In order to realize the information monitoring of the safety of raw materials,the remote communication of intelligent equipment and the warning of the food safety risk in the catering information system,a food safety management subsystem was designed and developed so that the information of raw materials and food circulation can be traced,and some important parameters such as temperature,humidity and the suppression rate of pesticide can be acquired and warned when they are beyond the acceptable values.Though above means,the level of the food safety supervision in university canteens can be greatly improved.According to the daily workflow of our student canteen and the functional requirements of the food safety management,the overall structure of the food safety management subsystem was designed,and the mixed structure of B/S and C/S based on.NET platform was employed to implement the food safety management subsystem.Oracle was chosen as the database platform,and the database of the subsystem was designed both in the conceptual structure and in the logical structure.The modules of raw material management,temperature and humidity monitoring,residual pesticide detection,samples management,information publicity,intelligent equipment communication interface and risk warning interface were designed and developed.The food raw materials safety information can be monitored and traced by the raw materials management and samples management modules;the remote communication between the server and the intelligent device can be realized by the remote communication interface module,and the risk of the food safety can be discovered in time and warned through SMS(short message service)by risk warning interface module.The implementation of the above functions can strengthen the standardization,timeliness and the food safety risk prevention capabilities of the food safety management.To ensure the security of information system,the thesis analyzed the potential dangers of the current application system and the protective measures which resist these potential dangers.The security mechanism of subsystem was designed and implemented on the basis of identity password authentication,data encryption algorithm,role-based permission control and security audit technology.The SQL injection and XSS cross site scripting were used to illustrate how to carry out safety precautions in the programming procedure.The results of system test and trial operation shows that the designed food safety management subsystem owns the merits of comprehensive functions,stable performance,high safety and good compatibility.At present,the designed subsystem has been put into use our university,and the system is assessed as easy to use for its users.Therefore,it can be generalized in other universities and large catering organizations.The promotion of this system exhibits application value and demonstration role.
