Food safety has become the social focus in recent years,which is closely related to people's health and life safety.With the boom of China's catering industry,there disperse catering units in a great quantity which supply low-price food.The catering industry is the last link from the farmland to the table,in which the food safety problem is extremely serious.As an important part of the catering industry,it has great difficulty in supervising food safety of small catering unit,which results from the small catering units' own characteristics,the deficiency in power of supervision,imperfect laws and regulations,and so on.Strengthening the food safety supervision has great significance on standardizing the development of the whole food industry.At present,the researches on regulating catering units at home and abroad mainly focus on sanitary supervision and the application of management system,but there are just a few comprehensive researches on food safety supervision for large and medium-scale catering units instead of small catering units.Based on the current situation of small catering units in Fuzhou,this paper researches the food safety supervision of small catering units through analyzing food safety supervision system and related theory.Moreover,by associating with the features of small catering units,it expounds the dangers hidden in the food safety supervision of small catering units from the perspectives of material stocking,the cleaning and disinfection of tableware,personnel training and the like.By adopting the methods of document analysis,case study,comparative analysis,deduction and induction,this paper conducts an investigation on the food safety supervision of small catering units in Fuzhou unban,analyzes the existing problems in small catering units,digs out the reasons for the great difficulty in supervising them and finally raises countermeasures for supervising them.Furthermore,the food safety supervision theory will be perfected in this paper.
