Fuling mustard is a popular food.In history,it has been engaged in Yuya mustard for more than ten years of origin,and Fuling mustard wins finally.It mainly wins by its terrior feature.But this is more of an effort of the local elites.But how do the local farmers construct Fuling mustard ? So,this paper takes the local farmers in the mustard village as the research object,and analyzes how they produce and construct the Fuling mustard.The study found that the local farmers also produced Fuling mustard through their daily practice.In particularly,whether planting,eating or selling the mustard,they all show a characteristic that combines the mustard with the local natural environment and social and cultural factors.In addition,in the“Recalling Mustard”,they have strong emotions and meanings to the wind dehydration in the collective production era.The complicated production process is the guarantee of the quality of the mustard,but the memory of the local farmers is different from the “beautiful” memory of the national and local elites.It is a kind of traumatic memory,which reproduces Fuling mustard.Therefore,the local farmers participated in the construction of Fuling mustard from their daily practice,and this participation is both economically and emotional.Particularly,they are full of suffering for the narrative of mustard,and I think the traumatic terroir gives Fuling mustard a unique “ taste of place”.
