With the development of national economy and the improvement of life quality,requirements of consumers for the types and quality of food are also increasing,and pasteurized milk,yoghurt and other refrigerated dairy products are deeply loved by consumers.Cold chain logistics is the main way to ensure the freshness and safety of refrigerated dairy products for people,cause the safety of refrigerated dairy products is greatly affected by temperature.From farms to dining tables,the cold chain logistics is required to guarantee quality and safety of dairy products.According to the investigation,dairy products that meet the quality and safety standards will be selected from the quality inspection links after being processed.And the transportation and sales links of the finished dairy products are the main links to generate safety risks.Therefore,focusing on the processed dairy cold chain logistics process,improving the quality and safety of dairy cold chain logistics,and reducing the risk of dairy cold chain logistics are the keys to reduce dairy safety issues.Based on this background and the perishability of refrigerated dairy products,this paper constructs a risk index model for dairy products cold chain logistics based on the risk of dairy products quality and safety caused by temperature,and carries out risk management for dairy products cold chain logistics.From the perspective of dairy enterprises,firstly,through combing and decomposing the dairy cold chain logistics process,this paper builds the three-level structure of dairy cold chain logistics process.In order to comprehensively identify the risk of dairy cold chain logistics,this paper combines three-level structure of dairy cold chain logistics process with the two-level structure of dairy cold chain logistics risk,and uses the WBS-RBS matrix method.And 39 risk points are found out.Based on the analysis and classification of the risk points of dairy cold chain logistics,the risk index system of dairy cold chain logistics is obtained.Secondly,the improved catastrophe progression model is established by introducing maximum deviation into the catastrophe progression model,so that the improved model can evaluate the risk of dairy cold chain logistics simply,efficiently and objectively.The cold chain logistics of dairy products is evaluated based on the field survey data of a dairy enterprise in Guangzhou and the improved catastrophe progression model.The assessment results show that the risk of dairy products cold chain logistics is high in summer of 2018 and 2019 due to the impact of high temperature and that the risk is high in non-summer of 2018 due to the omitting operation risk of personal operation risk while the risk is significantly reduced after taking management measures in 2019.Finally,according to the results of risk identification and risk assessment of dairy cold chain logistics,combined with the original data of dairy enterprises,this paper puts forward four risk control measures for common dairy cold chain logistics risks in dairy enterprises: strengthening the monitoring and early warning of the sales,taking the temperature data as the personnel assessment index,increasing the daily equipment report and emergency dispatching system,shortening summer delivery routes.
