In recent years,there have been frequent incidents of dairy product safety worldwide,causing enormous loss of life and property to society.In the face of severe dairy product safety accidents,the government is vigorously strengthening the construction of dairy product quality and safety management system.At the same time,dairy production and processing enterprises,as the main body of the dairy industry,are also deeply aware that ensuring the quality and safety of dairy products is the market for enterprises.The core of competition.In order to achieve control over the quality and safety of dairy products,many experts have considered different levels and provided advice to food regulatory authorities and dairy production and processing enterprises.However,the current research on the quality and safety risks of dairy products is still relatively small,and there is not enough theoretical support to make reasonable and scientific assessments and warnings.In order to improve the quality and safety early warning capability of dairy production and processing enterprises and improve the quality and safety of dairy products enterprises,this paper takes dairy production and processing enterprises as the research object,and deeply studies the quality and safety risk assessment of dairy products enterprises,aiming at the quality and safety of dairy products enterprises.The risk degree is divided and assessed,and the quality and safety evaluation model of dairy production and processing enterprises with high applicability is established to provide reference for the government and enterprises to formulate reasonable management improvement plans.The research work and conclusions are as follows:(1)Taking dairy production and processing enterprises as the research object,based on the perspective of supply chain,we will effectively overcome the one-sidedness of risk warning for single production links,and combine human,material,environmental and management aspects from macro and micro levels.The risk influencing factors were analyzed,and the main factors affecting the safety of dairy products were expounded,which laid a theoretical foundation for establishing a quality and safety evaluation index system for dairy enterprises.(2)Clearly establish the principle and purpose of the evaluation index system,and extract 9 important indicators in the three major links of raw material supply,dairy product production and processing,and circulation storage according to the factor analysis method to construct a quality and safety evaluation index system,and based on the entropy weight method Determine the weight of the index,and then use the theory of extenics to establish a quality and safety early warning model.(3)Combining the food safety data of eight dairy production and processing enterprises in Wuhan in 2016,conduct single-index risk assessment analysis on individual influencing factors in the production and processing of dairy products,and conduct multi-indicator comprehensive evaluation and analysis on multiple influencing factors.Quantitatively judge the food safety warning status of enterprises,and dynamically predict the development of food production safety status and information change trend.The evaluation results are basically consistent with the results of actual investigation and qualitative analysis,which verifies the rationality and applicability of the model.
