The purpose of this quantitative study was to investigate the safe food-handling knowledge of food service employees. A questionnaire was given to a purposive sample of 38 food service employees. The researcher constructed an online questionnaire (Survey Monkey). Adequate knowledge of food safety was defined by a score of ≥ 85%. Subjects worked at a variety of food service or food retail facilities. Only 7 out of 38 subjects received a grade of 85% or higher on the food safety questionnaire. The weakest areas of food safety were in time/temperature, and cleaning/sanitation. These findings suggest that food service workers would benefit from further food safety training. This would better protect the public. |
