In this experiment,wild Rose rugose Thunb seeds were used as experimental materials,At first the wild Rose rugose Thunb seed oil was extracted by ultrasonic-assisted method.the extraction process of seed oil was optimized by response surface metho dology.And then,the nutritive characteristics,antioxidant properties,and stoagerage stability of seed oil were studied.and shelf life predictions were studied.The results are as follows:1?Study on the optimum technological conditions for the extraction of wild Rose rugose Thunb seed oilThe response surface methodology was used to optimize the ultrasonic-assisted extraction of seed oil.The optimization parameters were:solid to liquid ratio was 1:17.63,ultrasonic temperature was 42?,ultrasonic time was 51 min.and the yield of seed oil under this process parameter was 14.16%.2?Using soybean oil and olive oil as references,the nutritional properties of wild Rose rugose Thunb seed oil were studied.(1)Wild Rose rugose Thunb seed oil contains active ingredients such as polyphenols,flavonoids,vitamin E,lutein,zeaxanthin,and ?-carotene.Among them,the content of total flavonoids was 72.23 times that of soybean oil;vitamin E content was 1.69 times that of soybean oil,and 6.77 times that of olive oil;zeaxanthin content was 11.52 times that of soybean oil,5.50 times that of olive oil,and 1.52 times that of olive oil with ?-carotene content,which was 1.04 times that of soybean oil.(2)21 kinds of fatty acids were detected in the seed oil of wild Rose rugose Thunb,11 of them were saturated fatty acids,6 of them were polyunsaturated fatty acids,which were 1 and 3 more than soybean oil and olive oil respectively.There were 4 kinds of monounsaturated fatty acids.Soybean oil is the same,one more than olive oil.The polyunsaturated fatty acid content was 678.317 mg/g,which was significantly higher than soybean oil and olive oil(p<0.01),and 1.19 times that of soybean oil.9.20 times that of olive oil.Among them,the content of linoleic acid was 405.441 mg/g,which was 6 times that of olive oil.The content of alpha-linolenic acid was 272.323 mg/g,which was 4.19 times that of soybean oil,40.83 times that ofolive oil,and there is a significant difference(p<0.01).3?Using soybean oil and olive oil as references,the antioxidant properties of wild Rose rugose Thunb seed oil were studied.(1)The ability of wild Rose rugose Thunb seed oil to scavenge DPPH·free radicals is signifi-cantly higher than that of soybean oil and olive oil(p<0.05)in a certain range.The clearance rates were 1.06?1.16 times that of soybean oil and 1.26?1.49 times that of olive oil.The wild Rose rugose Thunb seed oil clears DPPH·free radicals with an IC50 greater than vitamin C(Vc)and has a scavenging capacity less than Vc.(2)Wild Rose rugose Thunb seed oil has a certain scavenging ability for ABTS·+.When the concentration is 60 mg/mL?100 mg/mL,it is significantly higher than soybean oil and olive oil(p<0.05).the clearance rate was 1.3?1.5 times that of soybean oil and olive oil,respectively.Wild Rose rugose Thunb seed oil has an IC50 greater than that of Vc in the removal of ABTS·+free radicals,with a scavenging capacity less than Vc.(3)Wild Rose rugose Thunb seed oil has a strong scavenging ability for OH·.Lipid concentration in the range of 0.5 mg/mL?1 mg/mL,the scavenging effect of OH·radicals is significantly higher than soybean oil and olives oil(p<0.05).the clearance rates were 1.16?1.77 times that of soybean oil and 1.3?1.90 times that of olive oil.The IC50 value of OH·free radicals cleared by wild Rose rugose seed oil is greater than Vc,and the scavenging ability is less than Vc.(4)Wild Rose rugose Thunb seed oil has a strong scavenging ability to O2-·.When the lipid concentration is 5 mg/mL?10 mg/mL,the O2-·.clearance rate is significantly higher than soybean oil and olive oil(p<0.05),which is 1.16?1.25 times the soybean oil,1.28?1.82 times the olive oil.Wild Rose rugose Thunb seed oil has an IC50 greater than that of Vc in the removal of O2-·free radicals,with a scavenging capacity less than Vc.(5)Wild Rose rugose Thunb seed oil has different scavenging capacities for DPPH·,ABTS·+,OH·,and O2-·.in the order of OH·>O2-·>DPPH·>ABTS·+,and within a certain range.its scavenging capacity is positively correlated with the fat concentration.4?Researched the storage stability of wild Rose rugose Thunb seed oil(1)Using the Schaal method,Rose rugose Thunb seed oil seed oil as a control,through the determination of peroxide value,acid value,conjugated olefin,saponification value and malondialdehyde,the effects of four antioxidants,BHT,BHA?PG and TBHQ,on the oxidation stability of wild Rose rugose Thunb seed oil were studied.The results showed that compared with the control,the four antioxidants BHT,BHA,PG,and TBHQ all slowed the oxidation rate of the seed oil and prolonged the shelf life.Compared with the four antioxidants,the TBHQ was more effective than the BHT and BHA in inhibiting the hydrolysis and rancidity of the oil.PG with significant difference(p<0.05).(2)For predicting the shelf life of wild Rose rugose Thunb seed oil,When 20?,25?,30?,and 35? are selected for storage at room temperature,the estimated shelf life was 619 days,177 days,77 days,and 42 days,respectively.
