This study selected two strain wild Rose rugose Thunb as materials,analysing their fruit characters?appearance quality?textural parameter?nutritional components and antioxidant capacity.The purpose was to understand the quality characteristics of two strains of wild Rose rugose Thunb fruit,As well as difference between the inner quality and the appearance quality of the two strains,which provided the theoretical basis for the breeding and the development and utilization of the wild Rose rugose Thunb varieties.The results showed:1.Analysis of appearance-quality of varieties of wild Rose rugose Thunb(1)When the fruits of HCMG-A and HCMG-B are ripe,they are in the average weight of more than 8 g;The edible rates are in the range of 75%?82%and 82%?85%,The percentage of seeds is between 11%to 17%,10%to 13%and it is good raw material for processing rose oil;what is more,the fruit shape index is between 0.71?0.88,which is oblate or disc shape.(2)The L*?a*?b*value of HCMG-A and HCMG-B is more higher,especially,Among them,the a*value shows red color,which is the characteristic attribute of wild Rose rugose Thunb.(3)Fruit hardness of HCMG-A and HCMG-B is much lower than common fresh fruits and vegetables,Softening faster,not suitable for preservation at room temperature.2?Analysis of nutrient content and bioactive constituents of two strains fruit of wild Rosa rugosa Thunb(1)The ratio of sugar to acid in two strains of HCMG-A and HCMG-B is 8:land 9:1,the taste sweet and sour moderate,which can be used to fresh resources.The content of pectin is 2.25%and 1.36%in mature period,which is suitable for processing products such as sauce and so on.(2)HCMG-A and HCMG-B all have the highest amino acid accumulation in early August or so,which prove it can be used as a best harvest period.In addition,wild Rosa rugosa Thunb have abundant flavored amino acids,essential amino acids and pharmaceutical amino acids,which can be used as a superior medicinal and edible raw material.(3)HCMG-A and HCMG-B contain 18 kinds of mineral elements,including 3 kinds of large elements and 15 trace elements,which is beneficial to regulate human physiological function.(4)In the mature stage,the Vc content of HCMG-A and HCMG-B is as many as 768.880 mg/100g and 898.113 mg/100g.This proves that two strains fruit of wild Rosa rugosa Thunb can be a useful resource for health care product.As for the there indexes of the HCMG-A and HCMG-B that include peel,flesh and whole fruit,the order of lycopene content is peel>flesh>whole fruit.and the order of ?-carotene content is whole>peel>flesh.3?Analysis of Antioxidant ability of two strains fruit of wild Rosa rugosa ThunbFrom the DPPH radical scavenging activity,deoxidization ability and total antioxidant capacity of these 3 indicators,the Antioxidant ability of HCMG-A is better than HCMG-B.when we talk about the ·OH-scavenging ability and the.O2-radical scavenging ability,HCMG-B is batter than HCMG-A.
