Xinjiang is rich in apricot resources and bitter almonds are rich in protein,Used as a raw material for the preparation of bioactive peptides.In this study,we optimized the preparation process of enzymatic digestion of bitter almond alcohol protein antioxidant peptide,The degree of hydrolysis and DPPH free radical scavenging are used as indicators,and to study the optimal process by response surface methodology.The most active fraction was selected for application in horse meat sausage,and the industrial production design of bitter almond alcoholic protein antioxidant peptide powder,to provide theoretical reference for the production of bitter almond alcoholic protein antioxidant peptide powder,the results of this study are as follows.(1)The enzymatic digestion process of bitter almond alcoholic protein antioxidant peptide: Through the single-factor test,it can be seen that the enzymatic digestion time,p H,substrate concentration and enzyme addition all have effects on the hydrolysis degree and free radical scavenging rate,based on the single-factor test,the response surface test was carried out to optimize the preparation process,and finally the optimal enzymatic digestion process was obtained through the software as the enzymatic digestion time of 4 h,enzyme addition amount of 5000 U/g,substrate concentration of 3%,p H The actual measured hydrolysis degree of DH% and DPPH radical scavenging rate were 26.74%±0.54% and 97.86%±0.58%,respectively,which were less different from the predicted values,and proved that this response surface could accurately predict the optimal process of enzymatic digestion of antioxidant peptides from bitter almond alcoholic protein.(2)Purification of bitter almond antioxidant peptides: The purification of bitter almond antioxidant peptides was carried out by ultrafiltration assisted by macroporous adsorbent resin,and the HPD722 macroporous adsorbent resin was selected as the tool for the preliminary peptide purification in the subsequent study according to the preferred results.The fractions with DPPH radical scavenging rate of 97.55%±1.43%,superoxide anion scavenging rate of79.83%±1.55%,hydroxyl radical scavenging rate of 89.71%±1.61% and reducing power absorbance value of 0.713 were finally selected based on the antioxidant capacity determination,and the HPD722 type macroporous adsorbent resin was selected for the separation and purification of the fractions with molecular weights in the range of 1 KDa?3KDa fraction.(3)Industrial production of antioxidant peptide powder: material accounting,equipment selection,cost and profit were estimated for bitter almond antioxidant peptide powder,and its revenue was analyzed.Now the enterprise sells antioxidant peptide powder at 962,500 yuan/t,and the annual production is 10 t,so the total sales is 9,625,000 yuan,and the break-even point can be calculated as 0.71 t.
