With the rapid growth of China's social economy,consumers are paying more and more attention to the quality and safety of dairy products.However,dairy product quality and safety incidents occur repeatedly,seriously affecting the healthy development of the dairy industry and consumer interests.As the quality of dairy products has typical quality chain characteristics.Such as multi-link and multi-factor interference and influence each other,its quality risk management relationship is complex.Therefore,it's the key to guide the safe production of dairy products and guarantee the quality of dairy products,that how to correctly identify the quality risk influencing factors of dairy product quality chain,deeply analyze its transmission mechanism,and then realize the hierarchical warning of quality risk.Therefore,based on the quality chain theory,this paper carries out researches on key issues such as the identification of influencing factors of quality chain quality risk of dairy products,the construction of quality risk transfer model,and the grading warning of quality risk.The main contents include:Firstly,this paper uses risk event analysis and risk matrix method to identify the quality risk factors of the whole dairy product quality chain.Secondly,the Bayesian risk network is used to design the representation of quality risk transmission,and the D-S evidence synthesis method is used to construct the multi-link Bayesian network model of quality chain quality risk transmission.Finally,k-means algorithm was used to realize the quality risk classification of multiple batches of dairy products.The relationship between quality risk factors and quality risk of dairy products was studied through the sensitivity analysis of quality risk probability of each link and simulation.The results showed that the quality risk factors in the quality chain of dairy products had obvious difference in the final quality.Through sensitivity analysis,can form effective guidance dairy production related enterprises to improve production,improve the quality and safety of dairy products countermeasures.On the other hand,classification warning of potential quality risks can provide consumers with more references when buying different brands of dairy products,and provide more quantitative basis for the regulatory authorities to determine the key supervision of dairy enterprises.
