People’s demand for dairy products is growing with the improvement of living standards and consumption capacity. However, dairy product quality problems occur frequently in recent years, which not only seriously harm the interests of consumers, but also brings physical and psychological harm to society and family, makes people pay more and more attention to the safety of dairy products. Quality risk is an important factor leading to dairy product quality problems, Quality risk management to be effective in preventing quality problems arise. Quality risk management to be effective in preventing quality problems arise. So in-depth analysis of the quality risk becomes the key to solve the problem, the main researches on this thesis as shown below.Firstly, combined with the structure of the dairy supply chain network, cascading failure model is established basing on the coupled map to simulate the diffusion mechanism of quality risk in supply chain network. The simulation results show that the effects of sudden quality risk of a single node will infect other nodes associated with it, and even have the potential to lead to collapse of the whole supply chain network, which illustrates the severe consequences of quality risk in supply chain, and leads to the later research on identification and assessment of quality risk.Secondly, by profiting from the deviation of flow theory in the field of mechanical engineering, the model of dairy supply chain quality risk volatility transmission is established to study the transfer mechanism of quality risk, and based on network theory to construct a specific quality risk transfer network of dairy supply chain, measures the fluctuations of different enterprises and quality factors, identifying the critical nodes and key quality elements that affect the quality of dairy products. And the feasibility of the method is verified through simulation analysis, provides an identification and assessment methodology for quality risk source of the dairy supply chain.Then, due to the emergency of dairy products quality problem and the severity of its consequences, reverse identification model of dairy products quality risk is established to identify and evaluate the quality risk from the perspective of traceability, combining with the fuzzy theory and fault tree analysis method, it studies how to find the key elements leading to the sudden dairy product quality accident, improve the quality risk management system of the dairy supply chain. A case study by numerical simulation verifies the validity of the method.Finally, to control the quality risk of the dairy supply chain from two aspects of quality management of the dairy supply chain elements and the improvement of quality management system.
