Ginger and lily are typical medicinal and edible plants.Studies have proved that ginger and lily polysaccharides have a good hypoglycemic effect,and there are also hypoglycemic prescriptions in the classic works qianjin Prescription.Ginger and lily food and health care products in the market are mainly cough relieving,heat clearing and other products,ginger and lily hypoglycemic products are not common,and solid drinks are easy to carry and popular with the public.Based on the above background,this text was conducted to extract ginger polysaccharide and lily polysaccharide,a solid beverage with hypoglycemic effect can be prepared by combining the two with Chinese herbal decoction(Poria cocos,Earth ring,Radix glycyrrhizae,Radix ophiopogonis,Radix rehmanniae),to determine the formulation and concentration process of ginger and lily polysaccharide solid drink,to determine the quality of ginger and lily polysaccharide solid drink according to the national standard,to complete the pilot design,and to formulate relevant technical standards.The main findings are as follows:(1)The rehydration ratio and bulk density were used as evaluation indexes,and the drying of lily were determined as 7.5 h at 50?,with a bulk density of 0.606 g/m L and a rehydration ratio of 2.77,indicating good quality.The extraction conditions of polysaccharide were optimized.Ginger polysaccharide was extracted at the ratio of 1: 25 g/m L(ginger powder: water)for 180 min at 85?,and lily polysaccharide was extracted at the ratio of 1: 15g/m L(lily powder: water)for 150 min at 60?;Raw material ratio: Ginger extract: Lily extract: Chinese medicine decoction =3: 4: 2;The supplemental levels of xylitol 0.9%,strawberry essence 0.15%,citric acid 0.3% and monoglyceride 0.45% per 100 g of raw liquid were added;The optimized concentration process was 100? concentration at atmospheric pressure,concentration multiple of 10.6 and concentration density of 1.55;Under the conditions of concentrate: excipient =1: 2 and ?-cyclodextrin: soluble starch =1: 1,the solid polysaccharide beverage obtained had better stability and sensory quality.(2)The sensory quality,physical and chemical indexes and microbial indexes of ginger lily polysaccharide solid beverage all met the national standard.The energy value,fat content and carbohydrate content of polysaccharide solid drink are low,was a kind of low energy,low fat and low carbohydrate solid drink,which meets the needs of healthy life.With sensory quality and total number of colonies as indexes,the shelf life of ginger lily polysaccharide solid beverage was determined to be 380 days through accelerated experiment.The results of flavor substance analysis showed that Ginger lily polysaccharide solid beverage product 66 flavor substances,including esters,ketones and aldehydes.Compared to the original solution,the contents of isoamyl isovalerate-M,propyl butyrate,butyl acetate-M,2-methyl butyl acetate-M and other ester substances in the polysaccharide solid beverage increased,which gave the fruit flavor of banana,pineapple,apple and so on;The content of acetone,methyl-5-heptene-2-one,3-hydroxybutane-2-one,2-pentanone and other ketones increased,giving sweet taste to polysaccharide solid drinks and enriching the taste of polysaccharide solid drinks.(3)Ginger lily polysaccharide solid beverage produc to the inhibition rate of?-amylase and ?-glucosidase was 65.27% and 61.43%,respectively.Human hypoglycemic test showed that the average peak blood glucose of the experimental group(6.01 mmol/L)was lower than that of the control group(6.65 mmol/L),and the increment area of postprandial blood glucose was reduced by 22.57%.The results showed that polysaccharide solid beverage had a certain effect on reducing postprandial blood glucose.(4)According to the requirements of the enterprise,the production pilot design of ginger lily polysaccharide solid beverage with a daily output of 1 ton was carried out,including process flow,operation points,material balance and equipment selection.According to the experimental results and production practice,formulating the production technical standard of ginger lily polysaccharide solid beverage,and the product requirements and testing methods were stipulated,stipulate product requirements and test methods.
