A Study On The Development Of The Three-dimensional Teaching Material "Coffee Made By Hand" For The Specialty Of Operation And Management Of Star-rated Hotels In Middle Vocational Colleges

Secondary vocational education is an important part of the national education system,which provides a strong talent guarantee for the development of the real economy.After the introduction of policies on vocational education textbooks,all parties have reached a new height in understanding the importance of vocational education textbooks construction.Make some majors or subjects suitable for the use of three-dimensional teaching material form expression.The talents trained by the operation and management major of middle and high star hotels mainly serve for one of the six elements of the tourism industry--"accommodation".The coffee brewing service in high star hotels has become an important content to highlight their positioning and taste.Therefore,the secondary vocational education that provides talents for tourism is bound to offer courses related to coffee brewing.At present,the teaching materials about coffee brewing in secondary vocational schools are very limited,and the three-dimensional teaching materials matching with the teaching requirements of secondary vocational schools are very scarce.Therefore,it is necessary to compile the three-dimensional teaching materials about coffee brewing that are suitable for secondary vocational students and teachers to learn.By combing the historical evolution of vocational education textbooks to understand the forms and characteristics of textbooks in different historical periods,this study analyzed the advantages and disadvantages of three-dimensional textbooks,investigated the background of the development of three-dimensional textbooks of "Making Coffee by Hand",and took teachers and students majoring in operation and management of high-star hotels as the research objects.This paper analyzes and summarizes the problems of the existing textbooks,such as the lack of working process logic in the structure,the lack of instructive function in the operation of skills,and the lack of three-dimensional teaching resources.In view of the existing problems,this paper puts forward the writing ideas of developing the three-dimensional teaching material of "Making Coffee by Hand" : designing the structure of the teaching material based on the occupation ability list,developing the content of the teaching material based on the process operation,expanding the teaching resources based on the practical needs and giving full play to the characteristics of the three-dimensional teaching material.Taking a task in the three-dimensional textbook "Making Coffee by Hand" as an example,this paper analyzes the teaching structure design based on the vocational ability list,the content development based on the process operation,and the three-dimensional resource expansion based on the practical demand,and clarifies the development process of the three-dimensional textbook "Making Coffee by Hand".
