This experiment was conducted to investigate the effects of earthworm fermentation liquor on growth, slaughter, meat quality and serum indexes of Anyi Slate-Grey Chicken.A total of 320 chickens at 120 days of age were randomly allotted to 4 groups with 8 replicates per group and 10 chickens per replicate. The control groups were fed a basal diet, and those in 3 experimental groups(groupⅡ,groupⅢ,groupⅣ)were fed the basal diet added earthworm fermentation liquor at concentrations of 2.5μL/g,5.0μL/g and 7.5μL/g,respectively.The experiment lasted for 42 days. The results showed as follows:(1)There was no significant difference in the terminal body weight, average daily feed intake and average daily gain among groups(P>0.05),the feed to grain ratio of groupsⅡandⅢwas significantly lower than that of control group(P<0.05).The chest width and chest circumference of groupsⅡ,ⅢandⅣwere significantly higher than that of the control group(P<0.05).Compared with the control group, the slaughtering weight and thigh meat rate of groupsⅡ,ⅢandⅣwere dramatically improve(P<0.05),the breast meat rate of groupsⅡ,Ⅲwere improved significantly(P<0.05),furthermore,the dressing percentage, eviscerated rate and whole net carcass rate of groupⅢwas increased significantly(P<0.05).Compared with the control group, the water loss rate and L~*value of meat color in test groupsⅡ,ⅢandⅣwere significantly decreased(P<0.05),the cooked meat rate in test groupsⅡandⅢwas significantly increased(P<0.05),and the a~*value of meat color in test groupⅢwas significantly increased(P<0.05).Compared with the control group, the crude fat content in experimental groupsⅡ,ⅢandⅣwas significantly increased(P<0.05),while the crude ash content was significantly decreased(P<0.05).(2)There was no significant difference in amino acid content in chest muscle of Anyi Slate-Grey Chicken(P>0.05).The linolenic acid content of groupⅡwas significantly increased than that of the control group(P<0.05),The palmitoleic acid, oleic acid and monounsaturated fatty acid content of groupⅢwas significantly higher than the control group(P<0.05);The palmitoleic acid and erucic acid of groupⅣwas significantly higher than the control group(P<0.05).The groupsⅢ,Ⅳof cadmium content was significantly lower than the control group(P<0.05),the groupsⅡ,Ⅲof plumbum was significantly higher than the control group(P<0.05).Compared with the control group, the length of ileum in groupsⅢwas dramatically improve(P<0.05).In terms of fecal composition, compared with the control group, the groups III and IV significantly decreased the crude protein content(P<0.05),while significantly reducing the crude ash content of groupsⅡandⅢ(P<0.05).(3)Compared with the control group, the activities of superoxide dismutase(SOD),glutathione peroxidase(GSH-PX),catalase(CAT),total protein(TP),albumin(ALB)and alkaline phosphatase(AKP)in serum in experimental groupsⅡ,ⅢandⅣwere significantly increased(P<0.05),and the content of malondialdehyde(MDA)was significantly decreased(P<0.05),and the serum total cholesterol(TC)content in experimental groupⅢwas significantly decreased(P<0.05).In terms of serum hormones, the concentrations of triiodothyronine(T3)and triiodothyronine/tetraiodothyronine(T3/T4)in groups II and III were significantly higher than the control group(P<0.05),and the group III significantly increased the bursa of fabricius index(P<0.05).In conclusion, earthworm fermentation liquor can improve the growth performance, slaughter performance, meat quality and serum indexes of chickens, and promote the development of intestinal and immune organs. It is a kind of feed additive with potential development value, and the best supplemental level is 5μL/g.
