Food safety concerns people’s livelihood and is the foundation of social stability.Small catering,as the main part of catering industry,plays an important role in the field of food safety in the whole society.Strengthening the standardized management of small catering is an important content of food safety management,which is of great significance to promote the standardized development of the whole catering industry.Based on the information asymmetry theory,consumer behavior theory and food safety management system theory,this study takes Mingshan District of Ya’an City as the research object,constructs a food safety evaluation index system according to expert suggestions and relevant laws and regulations,and conducts a questionnaire survey on the food safety status of 268 small restaurants in Mingshan District to analyze the food safety situation of small restaurants in Mingshan district,According to the evaluation results,the existing problems of food safety in small restaurants in Mingshan district are pointed out.The results show that:(1)on the whole,the food safety of small catering units in Mingshan district has basically reached a good level;However,the number of catering units reaching the excellent level is too small,most of which are good and qualified,indicating that the food safety level of small catering in Mingshan district can be further improved.(2)Judging from the scoring results of individual indicators,most small catering units have also reached the excellent level,and a few units only score at the qualified level.The index element with the highest score is publicity information(C3),indicating that the food safety of small restaurants in Mingshan district is the best in publicity information;The index element with the lowest score is facilities and equipment(C1),indicating that small catering units in Mingshan District need to be improved in the introduction,maintenance and cleaning of facilities and equipment.Facilities and equipment(C1),sanitary environment(C2),tableware cleaning and disinfection(C4),cleaning and storage(C5),purchase bills of raw materials(C7)and disposal of kitchen waste(C10)in small catering units with an average score of less than 7.87,It shows that the food safety of small catering units in Mingshan district is lower than the average level of other index elements in these aspects.Therefore,small catering units in Mingshan district should focus on improving these parts in food safety.In addition,there are few daily supervisors of small catering,the weak food safety awareness of employees and the non-compliance of social supervision force are the reasons for the weak strength of food safety construction of small catering in Mingshan district.Based on this,in order to better promote the development of food safety in small catering industry in Mingshan District,this paper puts forward countermeasures and suggestions to strengthen the food safety construction in Mingshan district from three aspects: strengthening government supervision,improving the self-discipline level of food safety and strengthening the supervision of social forces.
