Vinegar culture has a long history,it was called "acyl" in ancient times,Shanxi people have been fond of vinegar since ancient times,so it is called "old acyl er".Around the eighth century BC,many vinegar workshops were built in Shanxi.During the Ming Dynasty,"Meiheju" vinegar workshop established the "fumigation method",and the traditional "white vinegar" was fumigated into "black vinegar".Since the founding of New China,the traditional brewing process of Meiheju Aged vinegar has been evaluated as a "national intangible cultural heritage",which has become a unique symbol of corporate culture.In the modern market environment of the ultimate pursuit of efficiency,the days of "slow in the past" are gone.Enterprises pursue "fast and faster",production should be fast,earnings should be fast,and even consumers also require fast.As long as a slightly distorted idea,vinegar enterprises will step into the ranks of ice acetic acid mixed with old vinegar,although the cost is reduced,but the product is harmful to health.At the same time,with the continuous development of The Times,traditional technology and consumer demand are also evolving.Facing the increasingly fierce market competition,Shanxi aged vinegar also faces the competition from Zhenjiang Vinegar of Jiangsu Province,Langzhong Baoning Vinegar of Sichuan Province and Yongchun old Vinegar of Fujian Province.Under the new situation,new background and new environment,how to improve the market competitiveness on the premise of maintaining the competitiveness has become a problem in the development of Shanxi vinegar industry.In the face of this situation,how to improve the production level,operating efficiency and profitability of enterprises has become an important link to promote the development of enterprises.In this thesis,x vinegar Factory enterprise is selected,and the relevant methods of industrial engineering theories are used to focus on the research and discussion of the problems in production,operation and management of the vinegar factory,explore the root causes of the problems,optimize and improve it based on the specific reality,and actively promote the evaluation of the improvement effect.This thesis first conducted a questionnaire survey on customer satisfaction in x Vinegar Factory,focusing on the defects of the enterprise in operation management,inventory management,production planning and sales personnel management.Secondly,I conducted a field trip to x Vinegar Factory and had a conversation with the management staff and some employees.Based on the results of the conversation,I explored the root causes of these problems.Finally,this thesis comprehensively uses Pareto inventory control method,optimal production strategy,queuing strategy,theory,5s field management method and other relevant theories and policies in the field of industrial engineering to carry out a comprehensive and systematic data analysis.Combined with consumer demand,the production planning and operation mode scheme of this vinegar factory are re-planned.Finally,combined with the inventory management strategy of x Vinegar Factory,the scheduling plan of sales and service personnel was optimized,the shift rotation system was set up reasonably,and the optimization effect was evaluated.Combined with the evaluation effect,it was found that the optimization plan for x Vinegar Factory played a more obvious role.After the implementation of the improvement program,customer satisfaction has also been improved.Through this study,it can be found that the production and operation management of enterprises under the new situation can be optimized by using the technology and methods of industrial engineering,which can help enterprises achieve the effect of reducing operating costs,improving operating efficiency,improving service quality,and constantly improving inventory management.Production planning,sales personnel arrangement,evaluation system and other aspects of the business indicators,so as to improve customer satisfaction,and finally achieve the overall improvement of business level.
