| The group catering industry has developed rapidly with the economic development.With the rapid expansion of the whole industry,the rate of food safety accidents has continued to rise,which has attracted the high attention of relevant government departments,social groups and people from all walks of life.Based on years of practice and actual investigation,enterprises should establish a sound and perfect food safety management system,so that they can have strong market competitiveness in the same industry.The author’s research takes D Group Food Management Company as the research object,conducting on-site visits and interviews with the company’s main management personnel and conducting on-site inspections on project food safety management.Combining the theory of information asymmetry,the author conducts countermeasures research on the problems in its food safety management.Combining the theory of information asymmetry,the author conducts countermeasures research on the problems in its food safety management.The research will combine the 7S management method with the management system of sorting,rectification,cleaning,literacy and safety,and deeply study the content of the construction of the safety management system in the field of food safety in the group catering enterprises.The research will combine the 7S management method with the management system of sorting,rectification,cleaning,literacy and safety,and deeply study the content of the construction of the safety management system in the field of food safety in the group catering enterprises.The implementation of the overall food safety management must pay attention to the process management and timeliness management.The author conducted a field interview and investigation on the food safety management of the management personnel of Group D Food Management Company,and grasped the main reasons for the poor understanding of the food safety,the actual implementation and the control of the food safety of the management team and the main management personnel of Group D Food Management Company,which can be summarized as follows: Firstly,the lack of training on the food safety knowledge of the employees led to the lack of awareness of the safety control of the employees in practice;Secondly,the unsound food safety management system;Finally,the food safety management system has no practical significance,and the "standard" and "basis" of management cannot be solved.Based on the above field investigation and interview,the author improved the food safety management of D Group Food Management Company according to the actual situation.The proposed solutions include: improving the organizational structure,enhancing communication channels,and improving rules and regulations.Reduce the food safety risk of D Group Food Management Company through the above methods and optimization. |
