With the continuous development of Chinese socio-economic,the people whodemand to the food consumer become faster and faster. Especially the totalconsumption in the dining areas rose rapidly,their food security is not only relatedto the health and livelihood security of the masses, also the healthy developmentof the entire catering industry,and more related to economic development,socialharmony and stability. In recent years, the restaurant industry all over the countryhas varying degrees of food safety issues, such as cooking oil incident. And aseries of food safety incidents that happened in the catering enterprises tell us thatthe regulation of food safety is essential. Food and beverage companies not onlyhave to improve legal and regulatory systems, at the risk management level topromote construction of food safety regulation in food and beverage companies,tomake full use of current information technology means to establish a scientific,comprehensive, reasonable and applicable food and beverage companies, foodsafety risk management information system,so that timely detection of food safetyrisks and effective control of food safety risks, and ensure the food safety ofcatering enterprises.Information management system of food safety risk management in food andbeverage companies are divided into four parts. First of all, it is the elaboration ofrelated concepts; it straightens out the catering enterprises of food safety and foodsafety risk and argues that it is important to demand the need for demonstration offood safety risk management information. Second, the article researches andanalyses the mechanism of the implementation and operation in the foreign foodsafety risk management information. And it found that food safety riskmanagement, information technology is an important method of prevention offood safety issues through the establishment of the information platform for thesystematic risk management and the implementation of protection. Then, itresearches and analyses the present stage in the food safety risk managementinformation of catering enterprises. It conclude that at present, China although theestablishment of food safety traceability system, early warning systems,information technology platform, but use less of the catering enterprises, theinformation base construction of facilities is relatively weak. The risk managementinformation cannot be shared. Finally, we can learn from the foreign experiences and domestic issues. On the basis of these we could raise the building ideas that inChina, food safety risk management need to establish retrospective, earlywarning, communication, and information sharing system. It means that weshould use information technology to promote the modernization of the food safetysupervision in food and beverage companies.
