Objective: To expound Hunan adult residents' dietary transition., nutriment-intake status and compare with 1992 to know the tendency, and to provide data for Hunan Residents' Nutrition and Health Status Database, we analyzed the data of dietary survey in 2004 Hunan Province Nutrition Survey.Methods: Multistage and stratified and cluster random sampling method was used to collect samples, and China Healthy and Nutritional Survey of 2004 Dietary Survey was applied. We input data with SY Dietary Analyzing and Diet Formulating Software. After arranging and verifying the data, we analyzed the data through x~2 test and t-test and F-test by SPSS 13.0 and SAS9.0 depending on data type.Results: 1. The chief portion of dietary in Hunan province, cereals, accounts for 32.83 % of the total intakes. Bean-made-food accounts for 3.38 % of the total intake, potato 0.99%, vegetables 33.37%, fruit 1.46 %, meat 12.64%, milk or milk-products 0.64%, egg 1.89%, aquatic product 4.64%, edible oil 4.21%, salt 0.93 %, others for 3.02%. Compared with the data of 1992, cereal-intake decreases, while the proportions of meat, edible oil increase.2. The three major nutrient contents meet need the demands, and the proportions of the three major nutrient contents' energy supply are disordered that fat accounts for 34.0%, carbohydrates 53.6%, protein 12.4%.3. 12.1g Capita salt intake exceeds the recommended intake; 419.5mg/d capita calcium intake is seriously inadequate, which accounts for 52.43% of the recommended intake. Cities', towns' and countries' intake account for 64%, 45 % and 46 % of recommended intakes; 0.9 mg/d per capita riboflavin intake is insufficient, accounting for 69.23 % of the recommended intake.4. The mean of BMI is 23. There is no difference between city and country.Conclusions: 1. That is to say that Hunan adult Residents diet status has improved from 1992. Dietary pattern, mainly with vegetal food, is trending to high-fat and high-fat feed, which deserves our attention.2. Energy and three major nutrient contents meet people's basic needs, but the proportion is disordered.3. The intakes of calcium and riboflavin are inadequate.
