| Chinese northern pasture land region is a large area which east from Daxingan range ,west to Aertai mountain, and the north connects Mongolia and south reach to the large region along the Greatwall. This region has a long history and very abundant nature resources, being famous for the nomadic culture and economy, especially for it's catering culture which has special style and Varity content. In history, there are some nomadic tribes living in this vast northern pasture land region such as Shanrong, Donghu, Xiongnu, Qidan, Mongolia etc. The diet culture created by these races affect not only the central region of our country directly,but also far to southern region,even far more to korean peninsula, Japanese islands, Siberia, middle Asia, West Asia and European region. Whereas, the culture of these regions also influenced Chinese northern horde culture.As the important part in Chinese diet culture, the catering culture of the Chinese northern horde is the core of northern horde culture. When it comes to diet ,all people believe that diet is the key factor in life and diet plays an important role in the development of humanity. In the same way ,diet make an great function in the development process of the northern horde.Using the theory and method of ethnology,anthropology,history,this paper focus on studying the food produce and eating style and the culture phenomenon of northern horde, try to fill up the investigative blank in diet culture. Diet culture also involved the spirit culture and system culture,from which we know the process of each race and every aspects of mankind's producing and living .This paper carries Marxism theories concerning ethnology, based on materialistic view of history and dialectical materialism, applying the most basic ethnology field investigation, adding the history cultural heritage analysis method to make the comprehensive research to the diet culture of the Chinese northern horde.In ancient times ,there were some research works about northern diet culture such as the 《Qi Min Yao Shu》 , 《Cui Shi Shi Jing》 , 《Bei Fang Sheng Jiang Fa》 of north Wei period, 《Nong Sang Ji Yao》 , 《Wang Zheng Nong Shu》 of Yuan dynasty, 《Sui Yuan Shi Dan》 of Qing dynasty,in 《Shi Huo Zhi》 of "Er Shi Wu Shi " and some historical book all concern these contents.Since 20 centuries, especially after 50's ,the research get fast developed in china mainland. Meantime , experts in Japan, Korea ,Taiwan ,Hong Kongalso do some research on Chinese diet culture. But all of them lake of the system study on diet culture in Chinese northern horde which even be deserted by researchers. Some works and thesis, although mention the diet culture of the northern horde, is lake of data and complete system of investigation. The professor zhaorongguang, who is working in Hangzhou commerce college studying the catering culture in china ,is the chief editor of 《the region history of Chinese diet culture》 ,which involved the diet culture development about different locality, different race. But it is not yet published now.The catering culture of northern horde is reflected in the life style,catering pattern,catering utensils,social function,the manifestation of art,catering stratum,catering exchange,heathy diet.catering care,theory of diet and so on.
