My dissertation, The study on Chinese diet culture from the view of ethnology , studies and analyzes the outstanding contributions and obvious drawbacks which existed in Chinese diet culture from the view of ethnology {culture anthropology). Because Chinese diet culture is always in the leading position of the world from past to now, and it is also the very important part of the Chinese culture ,so I select it as my research object. Compare with the fact that there are more than 800 million poor persons still facing hunger in the world, it is a remarkable success that China can support 1/5 population of the whole world by using limited farmland resources. I think there must have been many precious experiences which worth generalizing and popularizing.This dissertation consists of 10 chapters and the main contents about each chapter is as follows:Chapter One: Introduction. It clarifies the purpose and meaning of the subject, the definition and research scope of diet culture, the position of diet culture in Chinese traditional culture, the current study situation and research method.Chapter Two : The long history and plenty ancient codes and records concerning Chinese diet culture. It considers primarily that the diet culture begins from using fire to cook food. China is one of the origins of human civilization. There are many proofs in relics which show that primitive people used fire before. China has long history of agriculture civilization and many agricultural products originates from China; There are many food-manufactured methods with long history such as steamed bread, bean curd, wine, tea, etc. In the several thousand years of China history, predecessors had left abundant ancient codes and records that write something about the diet culture. This chapter also introduces these documents briefly.Chapter Three : Chinese diet thought system science. Since the food raw material comes from the agriculture so China regards the agriculture as the base of living for a long time. Because of the food is the god to the people, so Chinese people believe that they can keep health, enjoy culture, practice rite andmorals by eating. To chase the bodily content through eating and drinking is not their only goalChapter Four: The Chinese food remedy principle is very special and complete. Chinese people believe that the food and remedy can be combined and the medicine and food have the same source. Therefore, they had formed the complete theories system according to these ideas. It is really the great contribution to mankind and particularly to poor people that people can keep health by balancing diet, harmonizing five internal organs and caring the disease through fitting diet.Chapter Five: The great plentiful Chinese diet culture. Different ethnic group and region has different diet culture and special flavor food. Some primitive diet customs still exist such as stone cooking. There are many diverse food systems in China, such as the staple food, non-staple food, snack, dessert, beverage and seasoning, etc. A lot of related contents about the diet culture is described in various literature works such as the novel, poem phrase, painting, carve, drama, and so on. This chapter also discusses the eight series of food in China, the famous person and dietetic anecdote, the famous restaurant culture, The widespread application of the Chinese language " chi" and the convenient chopsticks and new diet festivals.Chapter Six: The esthetics expression about Chinese diet culture. It discusses and analyzes the shape and culture connotation of food carve, flower bread and dessert, as well as the esthetics performance about tableware and dining room and the esthetics ideal which is expressed by Chinese people in diet culture. Chinese people also pursue the synthetic beauty such as color, smell, taste, flavor, sound and the environment, etc.Chapter Seven: The tea culture with long history. It analyzes mainly the characteristic of minority tea culture and the culture spirit about Chinese tea event, tea art and tea method. The core of tea culture...
