In this study, to find a suitable way of extracting chitin and preparing chitosan from the body wall of the larvae of Tenebrio molitor Linne in Acid-alkali Method, there were some conditions those were selected in the first. They were the concentration of hydrochloric acid, time of desalting, temperature of desalting, concentration of sodium hydroxide solution, time of removing protein from experimental materials, temperature of removing protein from experimental materials. There are the following results: when the temperature is 30 C, the concentration of hydrochloric acid is 0.12mol/L, and the time of desalting is 32 h. when the temperature is 30C, the concentration of sodium hydroxide solution is 2mol/L, and the time of removing protein is 32 h . In the second, a square regressive orthogonal rotation was designed on the base of these conditions and three factors were evaluated that were yield, deacetylated degree and viscosity. At the same time, three better relative compounding were confirmed. After analyzing data with the quadratic polynomial regression analysis and there were the results. The time of desalting and the concentration of sodium hydroxide solution were the great factors and they were negative correlation to yield. The interact effects during the concentration of hydrochloric acid, the time of removing protein and the temperature of doffing acetyl, were the primary factors. To deacetylated degree, the time of removing protein was the greatest factor, and the time of doffing acetyl and the interact effect on the concentration of sodium hydroxide solution and the time of doffing acetyl were next factors. To viscosity, the concentration of hydrochloric acid was the great factor, and the time of desalting and the interact effect on the concentration of sodium hydroxide solution and the temperature of doffing acetyl were the following factors. And the interact effect on the time and the temperature of doffing acetyl was negative to viscosity.
