Abstract: Apricot kernel is the dry and ripe seeds of rosaceae plant Armeniaca mill. The apricot resources is rich and its production is high in China. Apricot kernel oil and Amgydalin can be extracted from apricot kernel. The flavor of apricot kernel oil is fragrant and it is a kind of good edible oil. Apricot kernel oil not only apply in cosmetics medicine and perfume industry ,but is regarded as lubricating oil. Amgydalin is widely used in medicine. The extraction of apricot kernel oil and the extraction separation and purification of Amgydalin were studied in the paper which provided reference for the application of apricot kernel oil and Amgydalin. The studying results as follows:1. Microwave was adopted to extinguish enzyme of apricot kernel. Comparing with the methods of boiling steaming and frying ,the method of microwave not only used shorter time , and extinguished enzyme completely but also remained Amgydalin in great degree. The optimum extinguishing enzyme conditions were: microwave power 5 minutes.2. The measurement and analysis of Amgydalin nourishment components: fat 49.90g/100g protein 21.70 g/100g carbohydrate 6.20 g/100g amgydalin 4.24g/100g.3. CHCI3 was chosen to extract apricot kernel oil. By studying the effect of extracting time material and solvent ratio and extracting times on the extracting rate of apricot kernel oil, the optimum extracting conditions of apricot kernel oil were concluded: extracting time 4h, material and solvent ratio 1:6, extracting times 3 times.4. The measurement result of apricot kernel oil physical and chemical index: apricot kernel oil is a kind of transparent liquid and the color is orange; tone: yellow 3.0, red 0.4; specific gravity: 0.9156; diopter: 1.4638;acid price:0.58;saponification price: 190.7;iodine price:97.20;POV:0.031.5. The decolorizing result of apricot kernel oil is as follows: at 70℃, the effect of adding 10% active white soil was better and longer time, better effect.6. The study of apricot kernel oil oxidiantion showed that the ray and temperature both had obvious influence on the oxidiantion of apricot kernel oil.
