Extraction of carotene and its purification,microencapsulation with Beta-cyclod were investigated in this article.Emphasis was putting on conditions for extraction, choosing suitable embed method with Beta-cyclodextrin and assessing microen capsulation characteristics.results showed that:products'. 1.The results are obtained by studying effects of solvent,breakness of carrot power, extracting time, extracting temperature and extracting times on extracting rate:1)Brokenness of powder is 80-120eye and The highest extracting rate was obtained by using acstone and chloroform(1:1.5v/v).2) The influential sequence is extracting times>extracting temperature > extracting time > ratio of material and solvent;The most proper conditions for extraction are:3)The conditions of extraction with above mixture have been optimized and the results is shown as follows:the extraction reagent was acstone and chloroform(1:1.5 v/v), the ratio of material and solvent was 1:6, temperature was 45℃, time was 60 minutes and extraction times was three times. Craotene extraction ratio reaches 1582.66μg/100g under this condition. 2.The crystal of carotene was successfully prepared by recrystallization.HPLC methods were used for the qualitative and quantitative analysis.The purity of carotene crystal was 88.56% by HPLC method. 3.The most proper conditions for microencapsulation with Beta-cyclodextrin by carotene. The optimum preparation conditions for microencapsulation were establishedas: carotebe oil: β-CD was 1:8 The temperature was at 50℃,The churning speed was 1200r/min,The water amount was 80mL and time for 5h.By microscope imaging and FTIR analysis,The microencapsulation is validated. 4.Comparing with normal drying way,the products produced by freezedrying have similar covering rates and beter dissolution,but considering of economy and the field they applied normal drying way is selected in the experiment. 5.Microencapsulation production is primrose yellow,Its liquidity is fine,covering rate is 48.89%, sizes are about 20um,water holding ratio is 3.02%,density is 0.5589×103kg/m3,melting and granule scater characters are fine.This kind of products have good thermal and light stability their characters accords with normal microencapsulation's standards.
