Dairy product is the most perfect food, it contains nearly all the nutrients the human body needs. It takes a special place in the food we have in our daily life. The dairy consumption has been used by World Health Organization as one of the important criteria to measure a country's living standard. The total amount of bacteria in milk or a dairy product is one of the most critical indexes during the whole product-processing period. The total amount of bacteria in raw milk directly affects quality of a dairy product. Therefore, quick measurement of the total amount of bacteria before dairy product processing is very important.Currently, the common methods applied in the measurement of the total amount of bacteria include Plate Count method, Impedance method and Flow Cytometry method, etc. In the Plate Count method, it's difficult to get an accurate result when the sample is opaque or when there are small particles. In the Impedance method, a standard curve has to be made in each detection. In the Flow Cytometry method, only professional technicians can operate the Flow Cytometer. The disadvantages of time-consuming, high cost, and the complexity in operation make these methods difficult to be used broadly.In this study, the color difference method is applied in the measurement of the total amount of bacteria. This method enjoys the advantage of easy handling, quick detection and low cost, at the same time, color theory and bacteria theory are incorporated in this method, and the advanced technique in computer is also used. As a result, the experimental device that is quick to detect and can give fair accurate results has been developed. Applying this method, the industries can cut their cost, win more time and then make more money.In this dissertation, the relevant theories in color are introduced, the framework of the experimental device and the detailed design are given, thedetailed experimental results are analyzed, the feasibility of this method is testified. After improvment, the application of this technique can be extended to the field of fast microorganism detection, the detection of dyes in textile industry, the identification of wood textures and the color incrimination of colors in package engineering.
