Rosemary(Rosmarinus officinalis L.), an evergreen shrub, is a natural . spiceberry of the family Labiatae. It was cultivated in Mediterranean region at first and now grows in several provinces of China. It has been widely applied in many fields for its rich contents of flavonoids, terpenoids and phenolic acids. However, it has not been applied so commonly in our country than in west countries. For the purpose of making better use, especially the use for a kind of natural antioxidant, of the resourceful rosemary plants in our country, some studies were carried out in this paper:1. A summary of chemical constituents of rosemary, free radical, antioxidant and the methods of antioxidant extraction from rosemary was given at the beginning.2. Essential oil was obtained with a method of Water-vapour Distillation and its chemical constituents and relative content were identified by GC-MS.
