To extract red jujube polysaccharide and protein residue as raw material,using ultrasonic microwave auxiliary enzyme method to extract insoluble dietary fiber,through the red jujube insoluble dietary fiber adsorption lead ion performance research,develop and develop a nutritional and healthy high dietary fiber biscuits,to realize the industrial development and functional food depth development to provide an effective basis.The main research contents and results of this test are as follows:(1)Through comparison test,insoluble dietary fiber was extracted by ultrasonic microwave assisted enzyme method.Through the one-variate test,the four factors with great influence on the jujube insoluble dietary fiber extraction rate:ultrasonic time,material and liquid ratio,microwave power and ultrasonic power were selected respectively,and the response surface optimization experiment with four factors and three levels was conducted.The best process for jujube insoluble dietary fiber extraction was determined as:ultrasonic power 280 W,material ratio 1:14g/mL,microwave power450 W,and ultrasonic time 20 min.The extraction rate of insoluble dietary fiber is 61.90±0.94%,hydraulic force(13.05±0.26)g/g,expansion force(5.17±0.65)g/g,oil force(8.93±0.66)g/mL.(2)Research on the metal lead ion adsorption of jujube insoluble dietary fiber found that under the condition of in vitro simulated gastric(p H2),the adsorption of heavy metal Pb2+by jujube insoluble dietary fiber reached equilibrium at 140 min,the balanced adsorption rate is 58.83%,and the balanced adsorption amount is 1.032 mg/g;However,in the intestinal(p H7)environment,red jujube insoluble dietary fiber absorbs Pb2+strongly,with the adsorption amount of 1.208 mg/g at 140 min,and the adsorption rate was 95.76%.The kinetics and isothermal adsorption model show that the adsorption performance of Pb2+by the insoluble dietary fiber of the red dates complies with the quasi-secondary kinetic model(R2=0.9687),and the adsorption inference of Pb2+by the red jujube insoluble dietary fiber is mainly chemorbent.The isothermal adsorption of insoluble dietary fiber in red dates complies with the Langmuir model,so it is concluded that Pb2+adsorption of insoluble dietary fiber belongs to the monolayer adsorption process,and it is inferred that there is a chemical adsorption effect.(3)On the basis of the preliminary formula,optimize the amount of insoluble dietary fiber,corn oil,low gluten flour,egg liquid and sodium bicarbonate,through the univariate test analysis,the amount of insoluble dietary fiber is 20 g,200g of low gluten flour,24g of corn oil,egg liquid was at 20 g,0.6 g of sodium bicarbonate.The best formula:insoluble dietary fiber is 18.9 g,204 g of low gluten flour,27.9 g of corn oil,0.6 g of sodium bicarbonate,egg liquid is 20g,20 mL of milk,16 g of granulated sugar,0.2 g of baking powder,4 g of salt,45 mL of water,and 0.3 g of ammonium bicarbonate.The cookies produced under these conditions are clearly layered,clear pattern and better taste.
