In this paper, a new cultivar "Ziqiu" has been taken as the experimental material. Thejoint producing technology of pigment,pectin and tartaric acid extracted from grape (Vitisdavidii Fo(?)x.) peel and pomace was studied. The main results are listed as follow:The extracting effect of pigment from grape (Vitis davidii Fo(?)x.) peel by solvent methodwas studied on single factor in this paper. Then the physical and chemical properties of thepigment were tested. The result showed that the optimal technological conditions were asfollows: extracting reagent was 80% aqueous ethanol solution, proportion of material andextracting reagent was 1:5, temperature was 80℃, time was 1.5 hours, and the yield is 2.08%.Then, the physical and chemical properties of the pigment were tested. The result showed: thecolor value, anti-acid and lightfastness of the pigment are good, the effect of metal ions such asMg2+,Cu2+,K+ on the stability of pigment is little. It provides a very good foreground toexploit and apply the pigment of grape peel.The technological conditions of extracting and purifying pectin, tartaric acid from grape(Vitis davidii Fo(?)x.) pomace were studied by orthogonal layout for the first time. The resultshowed that the optimal technological conditions of joint producing pectin were as follows:extracting reagent was 0.05mol/L vitriol solution, proportion of material and extractingreagent was 1:10,pH was 2.5, temperature was 80℃, 2 time, each time was 1 hour, and theyield was 9.82%,content of galacturonic acid was 68.86%; The optimal technologicalcondition of joint producing tartaric acid were as follows: extracting reagent was 0.05mol/Lvitriol solution, proportion of material and extracting reagent was 1:3,pH was 4.0,temperature was 75℃, time was 2 hours, and the yield was 4.24%,content of tartaric acidwas 14.15%.The quality tests of pigment,pectin and tartaric acid extracted from grape (Vitis davidiiFo(?)x.) peel and pomace were studied and the comparison of extracting effect between jointproducing and single producing were carried out as well. The result showed: the quality ofthe three product from joint producing was almost coincident with single producing, mainnorms were according with national norm.Compare with single producing, though the yield of pectin,tartaric acid from joint producing was reduced by 3.66%,4.03%, the material waseconomized by joint producing, and three product could be obtained through each technologyprocess. Compare with single producing pigment,pectin and tartaric acid, the benefit of jointproducing was approximately increased by 180%,38%,300%.
