In recent years, people have paid more attention to the research of antimicrobial substance from plants, and have made great progress. Eleocharis Tuberose peel is the dropping of the Eleocharis Tuberose during processing, most of them have thrown away as waste, except small part of them used as feed. If these wastes can be used sufficiently, it wil be a positive significance to increase the value of Eleocharis Tuberose.In this paper, we studied antibacterial substance's extraction, separation and antibacterial properties. The process of extraction of antimicrobial substance from Eleocharis tuberose peel with ultrasonic were studied; the properties of antibacterial substances were studied; antibacterial substances was isolated by TLC and silica gel colum chromatography, and the structure of antibacterial substances were identified useing liquid chromatograph mass spectrometer.In the study of extraction of antimicrobial substance from Eleocharis tuberose peel with ultrasonic, on the basis of single factor's test and orthogonal test, the optimal technological parameters were material 60 mesh, ethanol 65%,1:10 for ratio of material to liquid, 45min for ultrasonic time, extraction for one time. The inhibiton zone for Escherichia coli and Staphlococcus aureus reached 13.3mm and 14.3mm.The study of the stability of extractions from Eleocharis tuberose peel indicates that: the extraction has great stabilitys to temperature and ultraviolet light; in defferent concentrations of salt solution,sugar solution and the pH environment, the stability of the extractions changes.The result of the studys on the properties of extractions indicated that: the extraction of Eleocharis Tuberose peel has better inhibition to bacteria than Sodium benzoate and potassium sorbate, has worse inhibition to epiphyte than Sodium benzoate and potassium sorbate.The studies on separation of antibacterial substances and the identification by GC-MS indicate that: Eleocharis Tuberoses peel contains cholesterol, organic acids, eaters and flavonoids four types of active ingredients, and 11kinds of active material.
