Method for determination and risk assessment of free formaldehyde in aquatic products were studied in this article. HPLC,GC and GC-MS methods were established and the limit of determination, recovery and RSD of the three methods were also studied. The results were as follows: HPLC method: The limit of determination was 0.2 mg/kg, the recovery was in the range of 75.0%-87.1%, the RSD was less than 7%. GC method: The limit of determination was 0.5 mg/kg, the recovery was more than 80%, the RSD was less than 7%. GC-MS method: The limit of determination was 0.1 mg/kg, the recovery was in the range of 86.28%~92.36%, the RSD was less than 9%. All of the three methods all can be used to determine formaldehyde content in acquatic products,and can reduce the false positive probability..The free formaldehyde in Bombay Duck, shrimp and squid were determinated, and the results showed that free formaldehyde in Bombay Duck was between100mg/kg and 200mg/kg, the mean value was 108.6mg/kg; free formaldehyde mean value in shrimp was was 108.6mg/kg. free formaldehyde in squid was between1.8mg/kg ~ 32.92mg/kg, the mean value was11.02mg/kg.The risk assessment on free formaldehyde in Bombay Duck, shrimp and squid were conducted by referring to the method of CAC.The results showed that both of acute dietary exposure risk assessment and chronic dietary exposure risk assessment was accorded with the interrelated criterion, The common aquatic products were basically safe.
