Currently, the growing area of vegetables is about 14 million hectares in China. The production of vegetables is more than 60 percent of the world's production every year, but vegetable's deeply production is still at an initial stage. The amount of vegetable processing is less than 10 percent of the total. The way of vegetable processing is mainly roughing. Fermenting vegetables possesses of the biggest production in the way of vegetable processing. In 2000 the trade of kimchi was about 1.3 billion dollars around the world. Japan and South Korea had been accounted for more than 95 percent in the international market. The kimchi as a traditional snack food pocesses an obvious resource advantage in China.This article mainly researches on the technology of fermenting vegetables. According to the requirements of processing, this article establishes a distributed control system which is based on "King View" as the supervisory software of epigynous machine and Siemens S7-200 PLC as hypogynous machine to control motor and pump. The character of the sytem is "integrated manage, distributed control". It realizes some important functions such as the real-time data-logging, supervising, record checking, alarming, trend analysis, printing of the parameter and data, dynamic simulation and so on. The open loop transfer function has been deduced through experiment. After that the mathematical model of system is constructed by MATLAB/Simulink and the PID control algorithm is added to the mathematical model. By compared with different PID control algorithm, this article designed an optimization PID. The system is satisfy with the main need of user,and can be reused,extended and maintained easily.From raw materials to finished products, the entire process of fermenting vegetables finishes in an airtight equipment. The entire processing isn't contact with operators and air directly, so it fundamentally solves the problem of pollution. At the same time through the automatic control of fermentation parameters to monitor the fermenting process, it not only ensures the quality of product, but also creates the conditions of the fermenting vegetables in standards and makes the basement for the unique brand expansion in international market.
