As a by-product from edible fungi processing, mushroom industia l resid ue , most ofwhich are discarded resulting in resource wasting and environmental pollution, has acertain amount of polysaccharides and dietary fiber. In order to achieve its resourcedevelopment, selection of fermentation systems, optimization of the fermentationconditions for polysaccharides and dietary fiber and research of the related products wereinvestigated in this paper.First, by mea ns of choosing fermentation materia ls,selecting strains and constructingoptimization indica tors,the fermentation system was established. The results indica ted thatHericium erinacens resid ue was the most suitable matrix and the best strain forfermentation was Lentinus edode AX3.In liq uid fermentation system, polysaccharides anddietary fiber were determined as the evaluation indica tors for its optimization,while insolid fermentation system, optimized index was polysaccharides.Second, the later research focused on the optimization of liq uid zymotic technics andproduct preparing. By experiment, the optimum fermentation conditions were obtained asfollows: Glucose 2%,ammonium nitrate1%, ma gnesium sulfate 0.2%, strain age 4 days,inoculation volume 5%, culture 5 days,under which the content of polysaccharide reached28.37g/L, increased 160.04% and the dietary fiber content was 59.76 g/L,raised 140.97%.After blend ing, the prima ry product was achieved and the hydroxyl radica l scavenge ratereached 32.44%, increased 76.78%, can be used as the potentia l fuctiona l bevera ge.At last, the opotima l experiment showed that the best culture conditions of solidfermentation system and the product was prepared under it.The optima l culture conditionswere as follows: Glucose 2%,ammonium nitrate1%, ma gnesium sulfate 0.2%,strain age 4days, inoculation volume5%, culture 12 days.After opotima ting ,the polysaccharidecontent reached 0.41g/g, increased 115.79%, , the prima ry product was obtained afterpreparing and its clearance rate of hydroxyl radica ls achieved 32.44%, raised 76.78%,canbe used as the potentia l fuctiona l food.This paper provides a new way of the resource development of mushroomprocessing resid ue to intensive process farming by-product by biotechnology. Therefore, in such respects as avoid ing waste of resources, environmental pollution and enhancingindustria l competitiveness , etc,the study has gained its theoretica l and practica l value.
