This is a research about content control method of sulfoxylate which is based on a sample survey about formaldehyde and sulfur dioxide content measurement in driedbeancurd sold in Nanping . The tests are listed as follow:1. To measure the content percentage of Formaldehyde in driedbeancurd by using Acetylacetone,and the content percentage of Sulfite in driedbeancurd by using Pararosaniline Hydrochloride,then compare the two ratios,when the ratio is within 1.0:1.2~1.0:2.8 means that there are Sulfoxylate in driedbeancurd.The result of sample survey of driedsoybeancurd shows that Sulfoxylate are existed in 70% driedbeancurd on the market.2. Study on the relationship of content percentage of Hunter Whiteness and Sulfoxylate.The result shows that the content percentage of Hunter Whiteness is generally in proportion to that of Sulfoxylate.So we we mustn't choose the abnormal white one when we buy driedsoybeancurd.3. Study on the relationship of the removed content of Sulfoxylate and different times it immersed in cold water. The test result shows that the content percentage of Formaldehyde and Sulfur Dioxide in driedbeancurd decreased most obviously after it has been immersed in cold water for over 2 hours.4. Driedbeancurd with different temperature water immersion, with the temperature, formaldehyde and sulfur dioxide levels declining.According to the new Food Safety Law,we should focus on the followed aspects to control Sulfoxylate effectively:1. Strengthen supervision on driedbeancurd processing and link of circulation,especially on food additives , manufacturers should sign out additives for record.For link of circulation,we should strengthen management on certification of using additives.2.we should exert governmental function to garantee food safety, expedite China's food safety standards improvement, accurately positioning the relationship between food safety technical regulations and food safety standards,expedite establish standard method for measuring content of sulfoxylate added in food and ration standard of formaldehyde added in driedbeancurd. Push on food safety information publicity, intensify food safety publicity and education, improve management system of government's integrity.3. we should encourage driedbeancurd manufacturers to follow a industrialize and standardize road, initiatively introduce HACCP system to driedbeancurd processing,and establish the critical controlpoint in dried beancurd processing and control the quality so as to improve the management in food safety.Placing equal emphasis on interior and exterior enterprise environment, prohibit adding poisonous additives such as sulfur dioxide in driedbeancurd, increase economic benefit through technology innovation, make driedbeancurd as a trusted and nutritious food, so as to protect consumer's health.
