The tenderness of meat is important character of food. It is one of the most importantguide lines in haing, breeding and the processing of meat production and concemed byconsumer. Chen Runsheng, Lei Detian and Ma Xiaoyu, the professors of NortheastAgricult'Ural University, had first put forward the concept of tenderness of meat, and had takenthe lead in developing aPparatus of the meat tenderness in our country. The new methods andfunctions of measurement are required by the development of science and technology thatmake the apparatus have characters of high precision, velocity, reliability, digital display andpotab1e. So, the advanced methods of science and technology must be used to measure thetenderness of meat and foods.My subject study stress on measuring the tenderness of meat. It's core is themeasurement of shearing strength. WarnepeBratzler's aPparatus of measuring shearingstrength is general1y used by intemationa1. The system studied by me in which the technologyof single chip microcomputer is used combines the principle of WamepeBratzler'sapparatUs of measuring shearing strength with the technology of sensor, micro-electronics andcomputer to study the measure system of tendemess of meat.The functions such as maintain the peak value, digital display, light touch selection keys,over load protection and reset etc. are fulfi11ed by this system. The hardware core of thissystem is MCS--5l single chip microcomputer. Based on the requirements of the system thepower source, amplify circuits, data gathering and storage circuit and reset circuit weredesigned. The software of this system was programmed with C language of MCS--51 singlechip microcomputer that is a language of structIJral programming language, cofltains many'characters of advanced Ianguages and has the functions of assemble 1anguage. The software ofthe system was designed with structUral program module that make the stTucture of softwareclear and convenience debug and modify.On the other hand, for reducing the system error caused by amplifiers and A/D converter,at the end of this paPer the sources of error that influences the measure precision of system areanalysed and set down the solving scheme.In experiment process, firstly verify the system using three points method and meanwhileadjust the zero, compIete measurement and checkout measurement. Then build in and run theaPparatus. Based on the funCtion keys on the panel of apparams to seIect the keys and measurethe value of shearing strength and through the windows display the va1ue of shearing strength.Conclusionsil. The experiments show that the system is reasonably design and runs stably, and hasthe strong ability to counier the iflterfere. It fulfils the requirements of design.2. The system is the basement to improve, enhance and perfect the functions of measuresystem of meat tenderness.3. The system aPplied to measure the tenderness of the meat of poultry any meatproduction and any soft solid food and to measure the pull or press etc. It fulfils themany purPoses by one apparatus and has practicability common using and the goodprospect of spread.4. The study of "C--LM3" digital display apparatUs of the meat tenderness isadvanced in our country, is auto-manufactured and fi1ls up the vacancy of ourcountry.
