Abstract:[Objective] To analyze on monitoring data of residual Cholramphenicol on animal foods during2008-2011in Shanghai for be acquainted with the residual Cholramphenicol on Shanghai-sold animal foods. Assess the extent of injury on human healthy by uniting result of residual Cholramphenicol on Shanghai-sold animal foods to exposure condition. According to the usage and management of veterinary drugs home and abroad, to make advice for risk management, as the basic to make measure in order to guarantee the food safety of peoples.[Method] The international general risk assessment mode are used to assess the residual Cholramphenicol in animal foods with risk rank, risk feature, exposure assess and risk feature, etc. Chloramphenicol genotoxic in vivo in animals, the risk assessment to take a variety of food choices method, in accordance with the genotoxicity of carcinogens quantitative assessment of risk analysis which was recommended by the Codex Alimentarius Commission (CAC). To calculate margin of exposure (MOE) compare with bench mark dose lower confidence limit (BMDL) and dietary exposure as a risk characterization.[Result] During2008-2011,9,570samples of Shanghai-sold animal food have been checked. As the result,117samples were positive, at the rate of1.22%, with0.303-299v g/kg. As a result,42samples were positive among2,135samples for pork,(2.1%); pork liver and kidney,1among1,053,(0.095%); poultry meat,34among758,(4.49%); egg products24among1,406,(1.71%); red meat,3among369,(0.81%); aquatic food,13among3,849,(0.34%). Reference to the people exposure, the results are as the following:The accumulated exposure were:2008,95%exposure, MOE were191(adult) and64(children);2009,95%exposure, MOE were860(adult) and287(children);2010,95%exposure, MOE were739(adult) and246(children);2011,95%exposure, MOE were7595(adult) and2532(children):2008-2011,95%exposure, MOE were400(adult) and133(children);[Conclusion] The residual Cholramphenicol on current Shanghai-sold animal foods is with little damage. However, some years, as with lower high-end MOE and accumulated MOE, should be noticed. Non-animal foods are ignored in this research, actually, clinical usage of Cholramphenicol may be the potential risk of exposure in human body to harm healthy. Therefor, the residual Cholramphenicol exposed will cause health risk in human exposure.
