Pork is an important part of people's food, the safety and high quality pork is in people's pursuit of object.Since a lot of initiatives are taken to control the quality and safety of pork products in each step of the production process, this paper outlined the whole process control model applied into safe pork products production. Meanwhile, focus on control measurements used in safe and high quality pork production.lt expounds the present condition of pork prodnuction , many factors affect the pork quality and safety and including the whole process control .At the same time,It study and settling up the HACCP system of pig breeding ,butchery partition and the measurements used in safe and high quality pork production.According to many documents,the practice of pig breeding in our country province and a lot of exact datas, the composition is referred to the part 1, basic Regulation of standard composition from charter 1: the draft of standard and description regulation of work rule of standardization (GB/T1.1-1993), and part 3 standard composition Regulations for products from charter 1: the draft of standard and description reguldation from work rules of standardization (GB/T1.1-1997). Every segment is definitely required in the "High Quality Pork and Operation Regulation on Producing Techniques".Weshould pay attention to anti-epidemic,quarantine,disinfect,harmless of process,isolate, inocula-tion of immunity,feed additive,veterinary medicine,input and output.
