Boer crossbred goats (a crossbreed between Boer goats and XuHuai white goats ) at different age were used as the experiment animals in this study. It was studied to the production performance, slaughter performance and meat quality of different age and different sex goats at the same method fattening by two experiments. The results were follows:1. The production performance of Boer crossbred goats was lower on the condition in this experiment, especially to the lamb because of their weak adaptability immunity so that limit to their growth, and lose the advantage of growth. Comparatively speaking, the relative gain was declined significantly and the FCR was increased significantly with the growth of age(P<0.05). Meanwhile, the males'production performance was higher females significantly.2. Age and sex affected the living weight, carcass weight, meat weight and eye muscle area markedly or very markedly(P<0.05 ,P<0.01), there was no markedly difference on dressing percentage among 5 age groups(P>0.05); dressing percentage, meat-bone ratio and meat yield of carcass had no markedly difference between males and females(P>0.05).3. Meat color, tendemess, Lost water percentage and crude fat were affected markedly by age, meat color and tendemess of adults were significantly higher than other groups(P<0.05 ,P<0.01), the amounts of crude fat were increased markedly with the growth of goats age (P<0.01); The meat quality were not affected by sex except crude fat and cooking percentage.4. With the growth of goats age, the branched chain fatty acids and short chain fatty acid were increased significantly, there was the very significant difference among the five age groups (P<0.01).The C18:1 fatty acids were increased with the growth of age, but there were no markedly difference among all groups(P>0.05), it illustrated that the meat flavor were equal between adults and lamb, it was advantageous to lamb to slaughter in the same year. The effect of sex on the composition of fatty acids was reflected mainly that the amounts of C16:0 in females were significantly higher than which in males(P<0.05).
