This paper studied the effect of an equal amount of alfalfa meal substitute peanut seedling,on the growth performance,slaughter performance and meat quality of Boer goat.Select 75 Boer goat ewes which were in good health,normal appetite,about 4 months old,weighing 24 ~ 28 kg,according to the principle of similar weight,the use of single-factor completely randomized block design ewes are divided into five groups,namely control group,group ?,group ?,group ? and group ?,each treatment has three replicates of five sheep,that is,each has 15 sheep.Control group were fed the basal diet,the other four groups fed four different diets on the basis of basic with 10%?20%?30%?40% respectively of alfalfa meal amount instead of peanut seeding.The main results are as follows:(1)Five groups of test average daily feed intake of sheep there was no significant difference(p > 0.05),average daily feed intake with the increment of alfalfa meal replacement has a tendency to gradually reduce.Comparison between the four test groups,test group ?,? experimental group was significantly higher than group ? and group ?(p <0.05),and showed a trend of rising with the increased amount of alfalfa meal replacement.In the aspect of feed conversion efficiency,feed conversion ratio of four experimental groups were lower than the control group,the test group ? and ? compared with the control group reached a significant level(p <0.05),the control group,experimental group? the test group?,group?,group ? test feed to gain ratio were: 8.20,8.02,8.18,6.88,6.53.(2)Differences between five groups of live weight before slaughter was not significant(p> 0.05),shoe weight,tare weight,fat weight heart,kidney fat weight,abdominal fat weight and sebum weight,those were accounted for the proportion of the live weight before slaughter between five groups were no significant difference(p> 0.05),liver weight,spleen weight,lung weight ratio of live weight before slaughter accounted for the difference was not significant(p> 0.05).Boer goat slaughter rate showed a trend of reducing the rise with the increment of alfalfa meal replacement,but the difference between the five groups was not significant(p> 0.05).Carcass meat percentage of four experimental groups were significantly higher(P <0.05),in which group?was highest up to 65.48%.Use alfalfa meal instead of an equal amount of peanut seedling feeding goats,the GR value and eye muscle area of five groups showed no significant difference(p> 0.05),eye muscle area of four experimental groups were higher than the control group,in which the highest group ? was 15.96 cm squared,followed by group? 14.76 cm squared.Using alfalfa instead of peanut seedling feeding Boer goats,when the alternative is 20%-30% the slaughter can get a better performance.(3)Different amount of alfalfa meal replacement slaughtered flesh of Boer goats,sheep,after 45 min of p H and cooked meat rate have no significant influence(p > 0.05),the highest drip loss rate in the control group was 2.62%,comparison between 4 experimental groups,along with the increase of the amount of alfalfa meal replacement of mutton drip loss rate has a tendency to reduce,and group?was significantly higher than the other groups(p <0.05).In the shear stress of mutton,experimental groups were generally lower than the control group,group ? was significantly lower than the control group(p<0.05),between the four experimental groups,the shear stress of mutton shows a gradual decrease trend with the increment of alfalfa meal replacement,the group? was significantly lower than group ?(p<0.05).(4)Compared with the control group,the dry matter,crude ash of lamb of the experimental groups were higher,and the content of group ? and group ? lamb crude ash was significantly higher(p<0.05),but in the dry matter context,there is no significant difference(p>0.05)between the experimental groups and the control group and between the test groups.In crude protein,four groups were higher than the control group except group?,but the difference was not significant(P>0.05);Just cystine and proline demonstrated significant differences in 18 kinds of amino acid composition and content(p<0.05),essential amino acids contained in the adult?infant essential amino acids and flavor amino acid content showed the same law among five groups,namely group?> group? > group?> control group> group?.The ratio of the flavor and total amino acid was 0.26.Alfalfa meal equivalent alternative peanut seedling can improve the quality of mutton lamb partial amino acid content,improve the quality of mutton.There is no significant difference between palmitic acid,heptadecanoic acid,stearic acid,oleic acid of each group fatty acids,muscle linoleic of each group acid were significantly lower than the control group(P < 0.05),?-linolenic acid and?-linolenic acid were not detected in control group,group ? was significantly higher than group ? and group?(p <0.05),group? and group? were significantly higher than group?(p <0.05).muscle ?-linolenic acid content increased gradually with the increment of alfalfa meal replacement,in which group ? was significantly higher than group?(p <0.05).The n3 polyunsaturated fatty acids of group ? was highest and significantly higher than the control group(p <0.05),n6 / n3 values of the control group,group ?,group ? group ? and group ? test group were 11.53,5.11,2.86,2.53,1.90.group ? showed a more appropriate proportion of polyunsaturated fatty acids.That is,when substitute alfalfa was 40%,the fatty acid composition of lamb more in line with people's health needs.
