Bamboo shoot(phyllostachys nianiana munro)used as sample to study the postharvest physiological,biochemical changes and the optimum condition during storage.Through three factors and three levels of ozone-low orthogonal test on bamboo shoot,checked quotas about the changes of the nuitrition content and the effect of storage,optimized the condition about the best fresh-keeping technology of bamboo shoot.Ate the bamboo shoot by captive giant panda called "er ya tou",the main idea is to offer theorotical basis for the transport and storage of bamboo shoot in the future.1.Bamboo shoot was chosen to study the effect of postharvest biological characters in different storage conditions.The results indicated that bamboo shoot was climacteric vegetable.0℃was the best storage temperature.The respiration rate decreased dramatically compared to that of comparison.It decreased 64.35%after the 32nd day of storage.It can dramatically inhibited the activity of POD,PAL and decreased MDA content,maintained lower levels of membrane permeability and inhibited cellulose and lignin,postponed the process of aging,further,ascertained the mechanism of aging about bamboo shoot.2.Fresh-keeping technology of Bamboo shoot was researched tentatively.The results showed that the optimum storage technology for Bamboo shoot was treatment with 0℃,150mg/L ozone and 1 hour disposaled with ozone.After the 32nd day of storage under this condition,decay incidence was 6.19%.Lose weight was 7.45%.The storage effect of this treatment showed significant difference compared to comparison(P<0.01).Bamboo shoot applied could be products with better quality retention.Tbe content of Vitamin C was 4.52mg/100g and the comparison was 1.84mg/100g,compared to the type of ozone treatment,the content of reducing sugars(RS),protein decreased more than 16.48%and 24.02%respectively.3.There was not great different ate by giant panda with fresh or storage bamboo shoot.The time from smelling to eating a whole Bamboo shoot was almost the same,it was about 11s.
